Ok. There are 6 kind of fish in shadowlands, one kind exclusive per map and two that you can fish in any waternode just one is pretty common and another is quite rare.

Lost Sole 迷失的鰈魚 – you can and will fish this everywhere around 45-50% of your casts.
Elysian thade 樂土幽魚 – this ones are a rare catch, a bit more common in the harder zones. They come like once per 50 casts or so. Are the equivalent to midnight salmons, are used to craft bankets.
Silvergill Pike 銀鰓狗魚 – you can fish this in Bastion
Pocket bonefish 有凹痕的骨魚 – you can fish this in Maldraxus
Iridiscent amberjack 彩色鰤魚 – you can fish this in Aderweald
Spinefin Piranha 刺鰭食人魚 – you can fish this in Revendreth

In shadowlands all are inland water pools, and as far as I tried there is no difference inbetween all the pools in one map in terms of cath percentaje. Even in maldraxus there is no difference into fishing in green or black water.

The fisher trainer is in Oribos and is named Retriever Au’prin 漁獲者奧普林
Close to him you will find the fishvendor named Distributor Au’nagl 分銷商奧納可

This fishvendor sells baits (yeah like in draenor), are not expensive and works great, otherwise you will end with thousands of Lost Sole. You can also get baits while your fishing. I recommend baits always, specially when looking for elysian fish. The vendor also sells a pole 「仲介者垂釣竿」 (in case you don’t have the artifact one) that is good and increase your chance to fish baits.

How many fish from each kind you need to level up cooking?. Put in mind that around 100 from each one. But the most important thing is that in this expansion you cant level up cooking just with fish. There is no a full route with only fish or only meat recipes. Almost all recipes requires fish and meat, so you will have to hunt some beast also xD.

As some people seems to look for good spots to fish, gonna name one for each map. For me a good spot, and even more in the beginning of an expansion, is a place where you can fish safe and quiet and close to a flight path in order to move forward once needed xD.
So:
• In Bastion, go to Sagehaven flightpath
• In Maldraxxus, go to Theater of Pain flightpath
• In Anderweald, go to Refugee Camp flightpath
• In Revendreth, go to Darkhaven flightpath

If you want to level up your cooking with your fishing, you only need about 75 Iridescent Amberjacks total. You'll need more in groups of 5 if you want to make the lower level feasts (18 main stat versus 20 main stat on the higher feast).

You'll also need 79 Lost Soles, 35 Silvergill Pike, 15 Shadowy Shanks, 70 Pocked Bonefish, 15 Spinefin Piranha, 55 Raw Seriphic Wings, 15 Shadowy Shanks, and 10 Creeping Crawler Meat. Along with materials you can buy near the cooking trainer, this should get you to 75 cooking. All recipes will be orange.

If you are Night Fae, the Queen's Conservatory is a really great place to fish these up.
They have pools for 迷失的鰈魚 and 彩色鰤魚. Easy place to go if you have it unlocked!

Edit: And thanks to Fane we know there's 樂土幽魚 as well!

Ok so....I came here to get details about where to catch amberjack but got a cooking guide. I am going to post my experience that way you get can get your Iridescent Amberjack and move on with your life. Gonna keep it real simple folks.

I first got the Iridescent Amberjack bait from the fishing vendor in Oribos, (next to the fishing trainer). Flew to Glitter Basin, Ardenweald and walked right up to a fresh pool of water with NO POOLS showing, just regular ole open water and starting fishing. The bait buff gave me 30 mins to fish away and in that 30 mins I caught the following:

49 Iridescent Amberjack
12 Lost Soles
10 Gray Items

NO POOLS NEEDED. In fact the only pools I saw were for Lost Soles in the whole zone of Ardenweald.

I done 烹飪 with Fishing in same time. To get to 75 on Cooking i used only Fish :D. Cooking and fishing Trainer are in same place in Oribos 47 24.

Guide:

Step 1:

- Learn Cooking and Buy all recipes ( make sure you have 魚子醬餅乾 is from skill 0 )
- Learn Fishing and buy all tools from 分銷商奧納可 ( buy rod if you dont have any other 「仲介者垂釣竿」 )

Step 2:

Fly to Bastion and catch ( I was doing it in 46 30 ):
- 80+ 迷失的鰈魚 Better to get at the beginning more you will need them later ( this fish can be catch every where )
- 30+ 銀鰓狗魚 This you will get any way is in same place where 迷失的鰈魚 but main focus on 迷失的鰈魚.
Make 魚子醬餅乾 until lvl 25 of cooking then Move back Oribos to buy new recipe 蜜汁銀鰓香腸 and 肉桂燉骨魚
Make 蜜汁銀鰓香腸 to get minimum 30 lvl of Cooking.
Buy new Recipe 蜜糖鰤魚蛋糕

Step 3:

Fly To Maldraxxus to catch 65+ 有凹痕的骨魚 ( I was farming in 61 75 ) better catch more you will need them later.
Make 肉桂燉骨魚 to 43 Cooking skill
Fly to Ardenweald to catch 21 彩色鰤魚 ( I was doing it 48 32 )
Make 蜜糖鰤魚蛋糕 to get Cooking on 50 lvl.

Step 4:

Fly back to Oribos for new recipe 蘋果醬彩色餡餃
Fly to Ardenweald to catch 90 彩色鰤魚 ( I was doing it 48 32 )
Make 蘋果醬彩色餡餃 Until Cooking lvl 70.

Step 5

Fly back to Oribos for new recipe 炸骨魚
Fly to Revendreth and catch 10 刺鰭食人魚 ( I was doing it 63 43 )
Make 炸骨魚 until Cooking lvl 75.

When i had 10 刺鰭食人魚 i had fishing on 185, If you want just stay fishing 刺鰭食人魚 until 200 Fishing lvl.

Now You can use all meat xD.

Found the perfect spot in Ardenweald. It is at the edge of the map on the northside, 52, 21 on a lily pad, but it's been uninterrupted fishing for the entire time. The majority of the catches have all been Iridescent Amberjack.

If you have the Night Fae covenant:

1. Go to the Queen's Conservatory
2. There will be a few schools of Iridescent Amberjack/Lost Sole in the pools. Clear all the schools of fish.
3. Leave Queen's Conservatory and come back in

Three new schools of fish should have spawned once you come back in. Rinse and repeat as much as you like. Cheers!

These fish are any water in ardenweald. No need to find pools or use bait.

I picked the first open water I found outside of the heart of ardenweald (around 44.6, 46.6). Peaceful area with frogs and cranes running around.

Fished for 35 casts, I caught equal amounts 12x迷失的鰈魚 17x彩色鰤魚 and (12x)grey trash items that sold for about 3 gold. Three flavor items that I found were an oribos themed lure, lost sole bait and a key to open a lockbox.

I fished at 49.29 51.40 (THeart of the Forest) in Ardenweald for half an hour using 彩色鰤魚釣餌.

I had an effective fishing skill of 252, using these items:

納特的喝酒帽 and it's accompanying free bait.
釣魚 on gloves.
海灣長靴.
奧金釣魚竿 enchanted with 高強度恆金魚線.

For the duration of this I caught 138 fish.. Averaging out to 4.6 fish a minute.

My ratio of catches:
111 彩色鰤魚. 80.4%
22 迷失的鰈魚. 15.9%
5 樂土幽魚. 3.6%

I was on a lilypad with my new best friend 班尤娜 in the water just by the refugee camp flight master. Excellent fishing spot. Quiet excepting the louder mounts passing by, and Benyona's croaking.

Just go to 42.6/55.2 where there is a pad in the center add bait to pole and in 1 hour you will have 200+ Irisdesentnt Amberjack in 1 hr. No hostile mobs, no things flying around and just a piece of mind of peacefulness.

Fly from Ring of fates to Ardenweald (Tirna Vaal). As you go down the ramp from the flight master there is a pool on the left /way 63.25, 36.57. Lots of Lost Sole and Amberjack. Good place to fish for the recipe . bring plenty of smuggled Azerothian produce, Lusterwheat flour and inconceivably aged vinegar. Ratio for that recipe (a single serving) 3 Amberjack, 3 sole, 3 produce, 2 flour and 1 vinegar. Stay on the "shelf" and do not go down to the waterline around the corner. (got a lot of junk there). *Pocked Bonefish bait does NOT work here, Lost Sole is a given and needs no bait. The good news is that Amberfish bait DOES work in this little pool. Best of all you are rested here while fishing!

The most relevant uses for these fish as of Midnight are either for finishing off the achievement for Necrolord covenant's Abominable Stitching, or as an ingredient in 蘋果醬彩色餡餃, which is a component for 焦糖薄荷麵盤, a disgusting sounding, but pleasant to look at Decor item, crafted by the Cooking skill.
