I think Titanium Weapon Chain as an alternative weapon enchant is worth mentioning.
It provides more +hit than Enchant Weapon - Accuracy, but does lack the added crit. With the anti-disarm being very situational.
Nonetheless it provides a very cheap and effective alternative.

A lot of this commentary should come with the caveat of being specific to the first content tier. By the time you hit Ulduar hard modes, you should have developed the situational awareness to properly sequence your abilities and time your taunts to no longer be gemming and enchanting for threat/damage, and instead use the limited amount of customizability on increasing your survivability and maximizing cooldown efficacy. Also, under late-Wrath mechanics, agility doesn't provide nearly the value it once did for prot warriors.

Formula: Enchant Cloak - Mighty Armor should probably be the go-to cloak option for everyone with 537/540 defense. Likewise Enchant Chest - Super Health for chest.

It's pretty awkward to be pitching Titanium Plating as a high-value mitigation option for shield in one sentence, having in the previous sentence expressed concern about Enchant Weapon - Blood Draining remaining useful as health pools increase. This is backwards - plating loses practical mitigation value rapidly as encounter design shifts towards more dangerous unavoidable, magic-based, scripted cooldown use scenarios, so while the BV is still generating a lot of paper mitigation, most of the time, that mitigation is just put back to baseline overheal instead of keeping you from dying. On the other end, Blood Draining is a phenomenal enchant that will provide prot warriors with the largest survivability boost in almost all (in the mathematical sense) situations you are likely to see in Wrath content. (I can't remember who did the matlab simulation of this on tankspot back in the day, but it was pretty incredible). Essentially, the enchant has no value when total incoming damage is either extremely low or extremely high relative to your effective health pool against that damage, but rapidly gains value within a certain window on these two axes. The devs were spot on with tuning the numbers in this case, with only one mechanic in all of Wrath content consistently hitting hard enough, fast enough, often enough, to favor Enchant Weapon - Mongoose over Blood Draining, and only in specific situations: Heroic 25-man Lich King's Soul Reaper, with zone buffs at or below 10-15% depending on gear setup.
