After farming from 11:00 to 02:00 at the port of zandalar I did not recieve any of these salmons.
I then ran to the fishing trainer and learned Zandalari fishing, at rank 97/150 i recieved my first salmon the second salmon came shortly after.
Now at 02:40 and rank 130/150 I am calling it a night. In this session i have acquired three 大海魟魚 mounts and two 午夜鮭魚.

TL:DR
Make sure you have Zandalari fishing!

These share a cooldown with the Underlight Anglers Undertow ability. So 5 min. Using one WILL put the other on cooldown. They are single use, but will not be wasted if there is no pool in range.

After fishing up a couple dozen of these, I can tell you a few important things.

Fishing skill is irrelevant. You can catch them at any level.
You do not need to train Zandalari/Kul Tiran Fishing in order to catch these.
You can catch these fish in any water, in any BFA zone, and in pools.
These fish always drop as a secondary catch to whatever the primary fish is. So you'll always catch two fish when one of these appears.
Drop rate seems to be around 3%.
Despite what we've been told, it doesn't need to be night time. The drop rate is higher at night.
These do share a CD with the Undertow ability, but it doesn't matter since that ability doesn't work in BFA zones where these fish exist.

Fished for a hour from 12 midnight to 1 am server time with underlight angler (maxed) and fishing hat
skill in Zandalari fishing stated at 40 ended at 117 after a hour

So I tested what the different catch rates are at different times of the day(I Play on EU and my time is gmt + 1(same as server time))

TLDR

Drops in both oceans and river spots with the same catch rate
The catch rate is around 3-5% from 6:30 pm to 6:30 am
The catch rate is around 1% from 6:30am to 6:30pm
Pools make no difference in catch rate

All the data below here:

Fishing skill level: 150 + 15 (粼光釣竿) + 6(enchanted) + 5 (納特之帽) = 176
Location: 66.37 69.79 Zuldazar
I only fished in open water - No pools
I started of fishing from 3:30 am to 6:30am with the these catches:

Total catches: 670
變幻沙礫魚 (317 : 47.3%)
黏滑鯖魚 (300 : 44.8%)
(26 : 3.9%)
大海魟魚 (4 : 0.6%)
Junk (23 : 3.4%)

I had data from 7 am to 8 am but I messed it up, I had around 100 of each Sand shifter and Slimy mackerel but only had 2-3 catches of Midnight salmon - also had one catch of Great sea ray

from 8 am to 12 pm i had these catches:

Total catches: 735

So my guess is that the increased catch rate of is from 7pm to 7am, didn't have time to test that today, so i'll do that tomorrow.

However until around 6:30pm my catch rate of was around 1.2%. So my guess yesterday might have been a bit off, Pretty sure it must be between 6:30pm to 6:30am

So that means no change in drop rate for in pools, ~~I would not recommend fishing in pools at all as it seems you miss any chance of catching the 大海魟魚~~ - Edit: People have confirmed they caught these in pools so I must have been unlucky

Edit: I have read a few places that some think the catch rate have changed for the night period, 4 days ago i started fishing a bit and got this data:

For Oceanic servers: I think the "late hours of the day" here is tied to NA time instead of server time.
I fished for this all day and the droprate seemed to decrease significantly in the evening (server time evening on Jubei'Thos).

These don't always teleport you, despite no mention in the tooltip there IS a range limit as I gor the error message "no fishing nodes nearby"

Mousing over it you get- use: Teleport to the nearest fishing node in Kul Tiras and Zandalar. I'm in Boralus and right clicked on it; result- You are in the wrong zone.

These are far too valuable to waste on the on use to teleport if you are using them to teleport, you are a burden to your guild; these are important for feasts.

The drop rate on them is terrible and they sell for too much to waste when you can just walk to a fishing node. Don't be a burden, be a bro, donate them to your guild for raid feasts.

I caught 6 in 10 minutes at the waterfall near Veiled Grotto, Zandalar flight point at 6 am server time then 5 more over the next 50 minutes. It appears anytime after 6 pm and prior to 7 am will net the most catches.

Results after 1 hour of fishing without any enchants, head or fishing lure:
121 Great Sea Catfish
108 Redtail Loach
14 Midnight Salmon
No mount.
Fishing time 00:30-01:30 after midnight. And prices spiked to 860g each to my server (Tarren Mill-EU Horde). RNG i guess...

Last night I fished for 2 hours and I caught 14x. In the morning I fished for 2 hours and caught 6x. It seems time of day DOES affect drop rate and by about 50%.

I have noticed while there is an increased chance from 8:30pm-6:30am the 11pm-1am time frame has a marked increase jumping to between 6-10% drop rate. server times of course

Note: OP mentioned using fishing gear to push his fishing level to 176. This do150+21/150es NOT hep in BfA, since fishing level is capped at 150. My fishing level with the UA equipped shows: 150+21/150 .. Still 150. Unless you need the UA's special traits, you may as well just use the built-in pole and be ready to fight things.

Started fishing at coords 49.99 62.86 in Dazar'alor @ 6 am server time on Earthen Ring US and caught 5 midnight salmon within 15 minutes O.o

Edit: I caught 12 between 6 am and 7 am server time.

Like others have said, don't waste them on teleporting. I tried a couple times early on and got the "nothing found" message. Save them for cooking, or sell them for a pretty penny.

PSA: the HM tauren racial can proc on midnight salmon.

However the chance is small (rough match being less than 1%) but i didnt do the proper dependant variable calculations, but heres a rough breakdown:

Roughly 20% chance to get the racial proc, ~5% catch rate on midnight salmon (fishing at night), and an assumed 50% chance to have said racial proc on the salmon (since you catch salmon with another fish, it can proc on either fish in that cast). So therefore its a 5% chance to catch a salmon, then ontop of that a 20% chance for the racial proc and then an added coinflip.

In about 350 casts i caught 21 salmons with 1 racial proc, fishing from 7.30pm-9.00pm AEST.

So if you have a HM tauren, id highly recommend using it for your fishing. A low chance for extra salmon is better than no chance.

It seems like the drop rate increases significantly after 8pm PST (10pm server for me). It went from ~ 3-5% to ~15% at that time for me. Sample size is limited (caught about 20 fish in the last 30-45 mins), I'll update if I learn more.

I would like to keep track of all of my longer fishing endeavors for my own personal research purposes. Hopefully getting to track all times throughout the day. Tracking the 午夜鮭魚 is the goal here, and to see which times has more of a higher drop rate. Also
tracking the drop rate of the fishable mount (大海魟魚), that you can catch in Zandalar and Kul Tiras. I use the add-on Fishing buddy as well as put that data into my own personal graphs for comparison.

Fishing sessions are usually around 30 minutes or longer.

Anything less than 30 minutes, I do not consider for a session.

Sessions are at a fixed coordinate, not moving from said spot until I reach a certain # of catches.

Fishing skill level: 150 + 15 > (粼光釣竿)

Fishing in only only open waters. In-land, costal, mid-oceanic (water walking)

Will update frequently with data for Zandalar and Kul Tiras.

Did they nerf the drop rate on these or something ? I just fished up about 125 Frenzied Fangtooth and 125 Lane Snapper and not one midnight salmon to be found. Yesterday I fished up about 100 of the same and also no salmon, what gives ?

It is possible to get two 午夜鮭魚 from the same catch along with a normal fish for example 笛鯛. I caught these three fish today in the Hungry Rest cave (where 穴居怪叔叔 spawns) on 機械岡.

They count if you use 神秘魚護目鏡 and loot 神秘魚. Not a great way to get them but I got about 10 doing 神秘魚與牠們的產地.

8.3 Patch Update:

Midnight Salmon can be fished up in Uldum (current assaulted Uldum), either open waters or in fish pools. I even got one during daytime hours (roughly early afternoon) I am not sure if this is intended or not.

I have over 200 casts in the Vale and haven't seen one there, yet. I will keep en eye out if they 'drop' there.

Sweet spot today seemed to be between 12:30am - 1:00am EST. The drop rate was much larger between that time compared to even the prior or later 30 mins after.

I used the 超壓縮海洋 on the dock in Boralus, during the day, and was getting the 午夜鮭魚 about every 10 casts. I recommend this approach since it doesn't seem to factor in the time of day.

Found on the sea bottom at Vashj'ir around 83.19, 43.95 (underwater breathing isn't a problem because Vashj'ir gives you Sea Legs for 60% increased movement on the sea floor with underwater breathing as a benny).
