for every 20 Small Crescent Saberfish you will receive between 15 and 25 flesh (meaning an average of 1 flesh per fish)
for every 10 Crescent Saberfish you will receive between 15 and 25 flesh (meaning an average of 2 flesh per fish)
for every 5 Enormous Crescent Saberfish you will receive between 15 and 25 flesh (meaning an average of 4 flesh per fish)

As of Patch 6.1 all sizes of fish may be gutted with a stack of 5
for every 5 Small Crescent Saberfish you will receive 5 flesh (meaning 1 flesh per fish)
for every 5 Crescent Saberfish you will receive 10 flesh (meaning 2 flesh per fish)
for every 5Enormous Crescent Saberfish you will receive 20 flesh (meaning 4 flesh per fish)

Learning The Joy of Draenor cooking will give you 2 recipes which both require this flesh. These recipes give +5 skill until 600 and every time you cook them you have a chance to learn new cooking recipes.

All WoD potions require this item to make. And potions in WoD are very ... potent, especially at lower item levels. My premade level 100 druid has 2.5K intellect at ilvl605 - the intellect potion adds 1000.

Since no one has mentioned, these can be used to powerlevel alchemy once you obtain Draenor Master, just like many other professions. You can go from 1 - 600 in literally 15 minutes with 1800 of these.
Since stacks come in 200 now, it is much easier to buy them in bulk. On my server Garrosh US, they go for about 90g a 200 stack. Not too bad if you've got spare change and want an alchemist quick.

This is widely sought after, for the fact that it is used in a lot of recipes for raid flasks and potions. It sells very well on my server, so a lot of fishing = profit!

To the folks that indicated this is a good way to level cooking ... um no. It's generous to say you'd average 30% catch rate of regular crescents. No pools. You need 10x of those to make 1 flesh. You need 5 flesh for 1 recipe (to get 5 points). That's ~30 casts for 1 point. Considering there are other recipes that get you 1 point for 1 drop or catch, not such a good deal.

If you're reading this, well, 5+ years after this was a "must-have".... then you already know it still very well is a "must-have".
Not many players farm/sell these and they go for a killing on the Auction House.
A hidden gem to make you some money. They are still high in demand for profession leveling.
