If you look in your spell tab of the character sheet, the spell crit won't be there, however if you mouse over the spell crit, the spell crit percent for each school of magic is shown, this talent crit will be shown there.

This talent affects any spell that is Holy, so that means anytime you cast a Holy-based spell that can crit, this gives it 5% more.

Two non-Paladin Holy spells that I can think of are Vial of the Sunwell and Shathome Holy Water.

It increases only spells from the Holy tab or all spells that inflicts Holy damage? For example, Judgement of Command is from Ret tab, but deals Holy Damage.
