1. No catch up. If you didn't level yet, not much point starting now. You'll be throwing away at least a million gold just to level one slot. Which brings us to:

2. Leveling is per slot and if you picked wrong and blizzard later added items that made people not want your slot anymore, too bad! Start over. From 0.

I don't like anything about this system, haven't bothered leveling any patterns even though I'm a long time crafter. I'll wait until the market is saturated and maybe then I'll buy rank 7 for my main with my mission table proceeds. Flasks, Armour Kits, Potions, Food, Enchants, Engineering perks, Glyphs and Tomes are the way to keep professions relevant.

Tailoring and Blacksmithing were the only 2 that may not have had anything keeping them relevant beyond the one time buy, but they could have created some armour enhancement for them too, something for the cloak or something for the weapon for each respectively.

Or just let professions be something for cosmetics like mounts or something.

I wouldn't care if professions didn't even exist tbh, but i know others would. Just don't use professions as massive gold sinks for players. Not all of us have the time to spend farming gold.
