Prismatic Scale
Sha-Touched Leather
Exotic Leather
Heavy Exotic Leather

Patch 5.04 release day experience:
There's a ton of this stuff on the AH. Prices are dropping like stones. I was able to sell 300 (15 stacks) for 10g, but after that, within 12 hours, it's dropped to 1.5G each (30g/stack). I'm not sure if this is just the glut from the first day of MoP or what, but if you have a large stack (I have 1500), you might want to wait to sell them.

Given what's happening with 鬼鐵礦石 (basically the same thing; tons of it available), I'm wondering if Blizzard is deliberately making more material available than in Wrath or Cataclysm, to keep the AH prices low.

(Horde) Patch 5.04 early suggestion on where to get it:
Since players just starting out have two quests pretty much everyone does which involve killing skinnable mobs, you can use that to your advantage to get free leather.

The first is right off the airship; calls on our Horde heroes to kill 被煞侵蝕的徘徊者. Just hang around whenever a large number of our comrades are performing this service to our prospective Pandaren allies for some extra leather.

A bit later, a quest out of Grookin Hill called requires you to kill a number of 虎蜂 to acquire their legs. So there are scores of our fellow Hordies massacreing these poor Tigerflies for their 蟲腿.

IMPORTANT: As always, be polite when skinning other people's kills. Be sure they will not skin the kill before you do so. When in doubt, just leave it and come back a bit later. There should be plenty around for you.

This will certainly work early on during the expansion, but might be an excellent strategy long-term for getting 煞化皮革. The 虎蜂 are neutral and have half normal hitpoints, while giving plenty of leather, 染霧皮革, and 鼓脹肥腸.

Here's a nice farming spot I've found right at the beginning of the Pandaren island. Packs of skinnable animals that respawn in groups, if you're faster than the respawn rate, just kill the single animals in the same area between each pack kill (if really needed).

They drop both exotic leather and Sha-Touched leather. I've also skinned 1 Magnificent Hide after about 12 min. so not the best drop rate if it's only the blue hide you want.

In current live patch (5.0.5) the conversion to Exotic leather can be done while moving an/or while mounted.

The conversion of Sha-touched Leather to Exotic Leather is something you can do at LW 500, as depicted by the item.

Note that the conversion gives you two skillups per conversion. Unfortunately I do not know the upper limit, as I was doing the conversion on my 80 LW Druid who cannot yet learn Zen Master LW, and had to stop at 524 LW.

A great place I have found to farm this is North of Dawn's Blossom, In the Jade Forest. Tigers and porcupines drop a quick amount of these. I saw nothing about farming it on this feed so I thought I would add a good spot to look. I picked up a few greens as well. Fill them bags with leathers and moneys :D Cheers!

Until level 90 is attained--and access to more difficult areas--Silverhorn Stags, Silverhorn Yearlings, and Silverhorn Calves are a great early option for farming leather (both Sha-Touched and Exotic, more former than latter).

Additional Benefits include:

The occasional BoE
The rare Mote of Harmony drop
Vendorable junk - such as Antler Velvet (1g/stack of 20) and Splendid Antler (45g/stack of 5)
Plump Intestines
Neutral status - no aggro unless provoked
Decent spawn time
Decent Exp gain

They travel in groups of 2-5 and can wander close to another group--an easy target for AoEs.

I have personally found that it is possible to skin Magnificent Hides from these beasts. While I would not farm them for this particular purpose, every 1 Hide is 20 Exotic saved (or Spirit of Harmony, for that matter) for another day.

If you are looking for easier targets, early targets and/or limited walking distance for skinning, I suggest these creatures.
More specifically, the small groups slightly south of Dawn's Blossom (roughly 46.2, 50.7) in The Jade Forest to start.
