Any professions will work. All depends on what you personally need.

Many people pair up their professions with one gathering and one crafting as follows:
-
Minería
- with
Herrería
,
Ingeniería
or
Joyería
-
Herboristería
- with
Alquimia
or
Inscripción
-
Desuello
- with
Peletería
-
Encantamiento
- with
Sastrería
Pairing professions in this manner can be useful since the gathering profession provides the materials for the crafting profession. You certainly can buy the materials to level two crafting professions from the Auction House, but be prepared to spend A LOT of gold.
If you have a stable of alts on that server, definitely go for whatever profession you need to fill gaps. Some people will have multiple of one profession on a server to take advantage of the Daily Cooldowns.
Personally, I tend to pick my professions by what class the toon is, thinking about how each class would benefit from the profession. My
Guerrero
for example, has
Minería
and
Herrería
, but that is just my preference.
My
Brujo
's tend to be:
-
Encantamiento
with
Sastrería
to make Cloth Armor
-
Minería
with
Ingeniería
to make Engineering Goodies, especially those that are
Gnomo
or
Goblin
because I feel that it fits their race qualities

Minería
with
Herboristería
for those toons who I want to get the gathering xp boost from gathering ores and herbs

Hello there!
You said you are playing Destruction Warlock. My first character was Warlock, and it is still my main character. I myself picked Tailoring / Enchanting, because they are really going well. (You can disenchant items you made with tailoring.) Another thing is that, you will enchant your items, no need to spend golds on AH or fees! However, with Warlords of Dreanor, enchanting will change a bit.
I think Destruction Warlock is about managing your procs while using your chaos bolt. Therefore I will put my vote on Tailoring (
Lightweave Embroidery
) and Engineering (
Synapse Springs
).
Jewelcrafting and Engineering are most gold consuming professions without Mining. I just want to add that I really hated Frostweave Cloth farming for Tailoring, be prepared for it!

Herbalism/Alchemy and cooking has helped me save a lot of money on flasks/potions and food and earn a little bit as well

@OP- If you're anywhere as lazy as I am, then you'll want Engineering. Having a gob glider and nitro boost is just too good in terms of convenience.
I personally went Tailoring/Enchanting back in BC and never switched out...again, due to laziness (cbf to spend money and time to level a new prof, when the two I currently have make me money on a regular basis).

With WOD, alts, followers and garrisons, it does not really matter anymore. For example I have long had Alchemy and Enchanting on my main, and Herbalism and Inscription on an alt. I have no alchemy hut in any garrisons but I have multiple echanter shacks and herb gardens to maximise mat generation.

There's no profession bonuses anymore so just go for whatever you need. No need to be tailoring/enchanting strictly anymore, but then they are both good professions to have. Right now it boils down to what you want to make for yourself, and what you want to buy off the auction house.
I typed all this out and then realised this was a necro, ah well ;p

I know it's a necro, but I feel the need to point out something very obvious:
Every single garrison has an herb garden. You don't have to open it or upgrade it, but it comes standard with the land, kinda like how dirt comes with a house in real life.
