Hides are a random result of skinning, for the most part. Like any other leather drop they occur randomly but a result of skinning is by far the most common way to obtain hides unless you buy at AH. To cure hides you have to have learned the skill from a trainer and you have to obtain salt. Hides are obtained from any beast that can be skinned and although it may seem that some beasts are prone to produce more hides than others, I think it is simply because there are more of those beasts being killed and skinned.
