Getting these roots can be a pain, so here are some helpful tips I discovered:

Don't blow the whistle near the tuber unless a boar is in ear-shot. The tuber will vanish.

Multiple boars will come to a single tuber and dig one up each.

You can kite the flayers along with a boar to a tuber if the boar is being attacked by a flayer.

Another tactic you can use in a party with at least one hunter is to have the hunter shoot a few boar and kite them to a boar and then feign. Have a second member near the tuber ready to hit the whistle as soon the hunter feigns. The boar will look like they're evading back to reset, but then they'll run back and dig up the tuber.

Rogues can vanish pull multiple boars as well.

Be very mobile: some boars are alone and close to a tuber but you must react quickly. A flying mount is quite helpful to spot them from above.

I was doing this quest and accidentally called two boars to the same tuber. This causes it to become TWO tubers. I think this is what Adeiena previously mentioned.
I just thought it was cool.

The chance of finding one of these is EXTREMELY low as of 3.3.3. I've been at it for about 15 minutes, and I've only seen 1. Out of that 1 I saw, there were no boars around.

very few in the ground and lot of mobs on the big...what a pain!

Just go over 2 hill and u see Fellboars and other mobs. U can see things in ground waht look like Carrots. just use ur whistle and felboar what is near comes 2 u and start digging the ground. Then there comes an plant and u open it adn loot it. Easy!

the range on the whistle seems to be limited to only about 10 yards, and the tubers have a tendency of disappearing after the second whistle attempt if no boar comes.
Very big pain since not many boars go close to a tuber
