For me this was a pain to solo, but after a number of deaths I finally got a method that works.
I just finished it on my 120 DK, and here's what worked for me:
Up on the hilltop where Grokkfist patrols, there's a little alcove with the ettin's loot strewn around.
I stood in the alcove as far as I could, and pulled him to me. Then I used the rats. He only ran to about the fire, and then came back. This allowed the rats time to deal damage while I followed, and then backed up to where I started. This back and forth worked out for me, so I hope it helps someone else too.

I am a Holy Priest. Up on the hilltop where Grokkfist patrols, there's a little alcove with the Ettin's loot.
I stood in the alcove as far as I could, and I used Smite. He came right up to me.
I "Released the Rats" and immediately hit him with "Chastise" which freezes him in place while the rats chew on him.
During the proc time for Rats, I kept as much DPS on him as I could, while healing myself. Then I repeated.
Easy-peasy for a priest.

Remember you turn this in to Charles Davenport who at the end of the quest is back in the house of Marie Davenport, at coordinates 30.44, 66.88. If you do not use coordinates, then inside the west house in Millstone Hamlet, which is the Davenport Residence.

There's a number of annoying quests in this area involving goats and/or ettins. The sack of rats used in the Grokkfist encounter fears the ettin into other mobs (i.e the elite ettins around you), so keep this in mind.

Also, the wandering goats will attack on cleave, which can interrupt your flour bombs when fighting other ettin mobs.

Don't use the stupid rats they'll get you killed. They will pull other Ettins and make Grokkfist run.

If you're using the cave near Grokkfist to fight him, be careful. There is a hole in the world located under the small pool where he patrols. If I tried aggroing him while he was in that pool, he would immediately fall through the world and be out of range. Also, if you use the rats on him and he is feared into the pool, same thing. He falls through and will eventually reset. If you have some way to stun or freeze him in place just after setting the rats on him, it helps greatly to keep him from running around and falling out of range.
