I encountered her during the Bringer of the Light scenario but could not find any information on her.
After assisting Nobundo and escorting him back to Velen, you see a group of NPCs clad in gold-ish armor speaking to Velen.

Prophet Velen yells:
Divinius, (player character) has crushed the incursion. Now is the time to take the Chosen and finish off the leftover demonic taint within our halls. Secure the Exodar for our people once more!

Divinius yells:
As you command, Prophet!

She and her Light's Chosen squad then depart the Vault of Lights.

Does anyone know if we encounter her again later on?

If you wait nearby after completing the 聖光使者 scenario, the six appear again:

Divinius: We came as soon as we were able! Thank the Light that you are safe, prophet!
Prophet Velen: I am neither prophet nor pawn. Not any longer.
Prophet Velen: Did Romuul survive?
Divinius: Grand Artificer Romuul yet lives, sir!
Prophet Velen: Good. Find Romuul. Tell him to begin repairs on the vessel. We are going home.

I waited a few more minutes after that, but they didn't say or do anything else.

I honestly wish Divinius had been Yrel instead. Even if this was her only appearance in the entire expansion I'd be content.

She and the Light's Chosen are absolute beasts. Once you hear the Prophet Velen tell her to secure the Exodar, they run off and begin owning everything you did not already kill. Does not matter of their level or classification (eg: minion, lieutenant, elite, boss) they just run them over.
