Why is this item's icon a slice of cheese? Is this item supposed to lure the temple rats onto a friend or a burning building?
Or maybe the temple rat population has been inflicted with a King Midas-esque curse that turns all the rats that are touched by the curse bearer into cheese?

Either way, I can think of more way to make tasty things out of these rats than I should be able to.

In "High Priestess Kilnara's" room, you will notice lot of "Pride of Bethekk" panthers at the sides. These will, at 50% (phase2), all awaken and attack the group.

However, these can one-by-one be pulled, and can be killed before the 50%, making phase 2 slow. Pulling 1 or 2 in for cleave while focusing the boss is probably best.

The deal with these rats is, that you can awaken the panthers from a distance, making the cleaveage-pulling way easier!

EDIT; This is used for the achievement; "Here, Kitty Kitty..." - Everyone in your group (4 out of 5 atleast) need to have picked up an rat before starting the encounter to possibly gain this achievement

For some reason, even while the item is unique, wowhead shows it as stacking to 20 ^^

To get a rat, you literally loot it. Much like the Canal Crab daily fishing quest for example. The rats are around the temple, and they respawn every few minutes.

What exactly to they cause the panthers to do?

When you "use" a rat, you are able to target where you want to throw it on the ground. If you throw it near one of the Panthers during the fight, the Panther will gain some type of enrage buff, so you must kill it quickly.
