You will need to turn in 25 Valiant's Seals to each Horde Faction, like you had to do for the first one. the dailies are the same for each. If you do the four dailies for one, then switch to another the same day, you cannot do the four again. But if the "weapon quest" is different, you can do that one.

So, to do this, I need to become a Valiant of a different race, after becoming a Champion for my race...

... in the process of doing so, to pursue this achievement, do I lose my standing as Champion of another race / access to the first race's Quartermaster / access to Champion dailies; or do I remain counting as a Champion of my original race?

I really wanna know before switching to work on this. :/

News has reached your ears that the Argent Crusade is building a great coliseum on the northern shores of Icecrown, where they have organized a Tournament where the soldiers of the Horde (and Alliance, unfortunately) can hone their skills in the hopes of one day becoming a champion of all Horde factions, to be amongst the best the Horde has to offer, and to fight alongside all other champions when the day comes that the forces of all those who seek to rid the world of the Scourge will march towards Icecrown Citadel to confront Arthas himself, and decide fate once and for all.

Your first task in this great endeavour, is to travel to the Argent Crusade Tournament grounds in Icecrown, just North of where Arthas resurrected the once great blue dragon and consort of Malygos himself, Sindragosa, the place now known as Sindragosa's Fall.

Once you have made your way there, talk to Justicar Mariel Trueheart who will give you the quest that will begin the long road to become a Champion of the Horde.

1. The Argent Tournament

She will tell you to talk to the Magister Edien Sunhollow, member of the The Sunreavers, with whom you'll now be able to gain reputation with.
After you've talked to her, she, and the two other Sunreaver members on both sides of her will all give you 1 quest, each of which focuses on 1 of 3 main abilities that the mounts in the Tournaments posses, abilities you'll need to master if you wish to beat your opponents in mounted combat.

2. Mastery of Melee (Magister Edien Sunhollow), Mastery of the Charge (Amariel Sunsworn) and Mastery of the Shield-Breaker (Galathia Brightdawn)

When you have completed your mounted training, and are familiar with your mounts abilities, you should speak to Magister Edien Sunhollow once more.

3. Up To The Challenge

The Aspirant's Seal's you need to gather for this quest, are rewarded for doing the 3 available dailies each day.

4. Training In The Field, Learning The Reins and one of 3 random dailies: The Edge Of Winter, A Worthy Weapon or A Blade Fit For A Champion

Doing all 3 quests will grant 5 Aspirant Seal's, which means you will have to do them for 3 days in order to get the 15 Seal's required to finish the quest. When you have obtained all 15 Aspirant's Seal's, talk to Magister Edien Sunhollow for your final challenge before being promoted to the rank of Valiant.

5. The Aspirant's Challenge

After you have defeated the Argent Valiant, and have been promoted to the rank of Valiant in the Argent Tournament you will be told to talk to the Grand Champion of your home faction.

6. A Valiant of Orgrimmar, A Valiant of Sen'Jin, A Valiant of Undercity, A Valiant of Silvermoon or A Valiant of Thunder Bluff

Your factions Grand Champion will give you the following quest after talking to them.

7. The Valiant's Challenge

With this, a new set of dailies will become available, rewarding a total of 5 Valiant's Seal's a day, meaning you will have to do the dailies for 5 days.

8. At The Enemy's Gates, The Grand Melee and one of 3 random dailies: The Edge of Winter, A Blade Fit For A Champion or A Worthy Weapon

After you've collected all 25 Valiant's Seal's, you will have to defeat an Argent Champion in order to become a Champion with your faction.

9. The Valiant's Challenge

After you've bested the Argent Champion, return to your factions Grand Champion and tell him/her of your victory. You will then be promoted to the rank of Champion within your faction. You will than be told to talk to

10. A Champion Rises

This quest rewards you with your very own Argent Gruntling as well as 10 Champion's Seal's which can be used to purchase rewards from the quartermasters of the factions your a Champion with, and include vanity pets, mounts, tabards and gear.

The last batch of new dailies will also become available.

11. Among the Champions, Battle Before The Citadel, Taking Battle To The Enemy and Threat From Above

These quests all reward you with 1-2 Champion's Seal's, as well as the choice of either a Champion's Purse, a bag that always contains 10 gold, or Champion's Writ, which you can turn in at your factions quartermaster for a reputation token for that faction (grants 250 reputation per token).

Note that the quest Threat From Above is a group quest, and should not be attempted solo for most classes as you will have to defeat an 80 Elite Frost Wyrm, and 3 80 Elite Cultist Bombers!

The moment you become a Champion of your home faction, you can talk to one of the 4 remaining factions Grand Champion to become a Valiant with them. It is not possible to be a Valiant for more than 1 faction at any given time.

12. Valiant of Orgrimmar, Valiant of Sen'Jin, Valiant of Silvermoon, Valiant of Thunder Bluff or Valiant of Undercity

Once you've become a Valiant for one of the remaining 4 factions, the Valiant dailies will open up again (if you've already did them that day for your home faction, you will have to wait till the next day).

You will NOT lose your Champion dailies, or your status as Champion with a faction if you decide to become a Valiant of another faction. You will be able to keep doing the Champion dailies, along with the Valiant dailies.

You can repeat this process until you are a Champion with all 5 Horde factions, at which time you may call yourself a true Champion of the Horde.

Are you able to get the Server First for this type of Achievement or should I just not worry about it?

I think the patch notes said something about unlocking more dailies for those with the argent champion title, which you get from being exalted with BOTH the argent dawn and the argent crusade.

These champion achievements aren't entirely obvious.

(1) In the main building, you need to complete the "The Valiant's Charge" for the particular faction. This will require 25 Valiant Seals. You can get these by doing the dailies @ The Argent Tournament Grounds.

*NOTE* - You must be on a jousting mount with the lance in slot. Otherwise Squire Danny will not give you the chance to fight.
(4) Argent Champion shows up and talks to Squire Danny.
(5) Battle Begins.
(6) Immediately "Charge" (3) champion. Activate "Defend" (4). Then keep at a distance and click "Shield Breaker" (2). I do the latter by just running away at an angle. Any time the Champion is at a distance, activate "Charge" (3) again. It's a very easy fight if you do this.
(7) Return to main building to cash in quest to get the achievement.

Note - This achievement takes a while because of the 25 Valiant Seals needed.
