I finally reached 70 with my lock but recently I have been going through dungeons and picking up one handed swords rather than staffs. I was looking through the wowhead database and realised I was not sure which off hand would do the best job. Could anyone recommend which off hand to aim for? And wat offhand is easy to get which should be essential to go along before raiding?

The quest for the dungeon Sethekk Halls has "The Saga of Terokk" as a reward. You can easily get it by just running Sethekk Halls... although if you picked something else for the quest and vendored it... other instances that offer an offhand is Mechnar and I believe Shattered Halls and/or Arcatraz.
