I would assume that if you had Sword Spec with Fist MH, Sword OH that if it procced off of your OH then it would do what it does if you were dual-wielding swords: proc a MH swing regardless of weapon.
Not quite, mace and sword spec do not carry over to the other hand regardless of the weapon. Dagger and fist specs do however because of the way crit is handled.
To answer your question, you need 2 swords to get the proc for each hand.
That's not correct.
If you off-hand a sword you'll be able to proc a main-hand attack regardless of the weapon type in your main-hand.
Believe it or not, the most optimal spec for raiding is fist/sword.

I don't know what half these people are talking about, swords procs going to MH and such, because it doesn't.
If sword spec procs off a OH swing, it use the OH to attack again, and if it procs from a MH swing, it will use the MH to attack.
And if you are specced into both fist and dagger, assuming you have a fist in MH and dagger in OH, and without the specs you had 25% crit, then you'd have a 30% crit chance for your MH and a 30% chance to crit for your offhand. if you were only specced into fist spec, but had a dagger offhand, assuming the same circumstances (25% crit without the spec) then you'd have a 30% chance to crit with your MH and a 25% chance to crit with your offhand, they do NOT carry over.
It will say 30% chance to crit, but that's only for your MH.

As Strayn said, you're wrong about sword specialisation. Sword spec never procs an off-hand attack.
You were correct about the fist and dagger specialisations though.
