Alchemy you will get the healing, Mining the HP and Enchanting (got atm) the enchants ofc, so I can't really decide I think all of them are fun to skill up except mining!
Alchemy does not give healing, herbalism does. Instead, alchemy gives mixology, which increases the effect of your potions and flasks.
Tbh, anything goes for leveling profs, but 2 gathering profs is the most lucrative. Just farm herbs/skins/ore and sell them at the AH.
If you want professions you'll be using at endgame as well, then JC is one of the (if not THE) best. Tailoring is also nice, and goes pretty well with enchanting. However, I did tailoring/enchanting myself and it's pretty expensive/time consuming to keep it up.
In the end, it's all personal preference. Really.

I have enchanting/tailoring myself and am extremely happy with it from a PvE point of view. However, leveling them up was a very slow and at times expensive process. The rods (or the mats to make them) you need to have to disenchant gear can be quite expensive and need to be upgraded a bit too often, and the enchants you make cost a lot in terms of materials, so every skillup comes at a price. You can try selling enchants to skill up, but I personally had very little luck with that as people only seemed to want to buy endgame enchants anyway.
In the long run though, it kind of evens out, as you will be able to sell endgame enchants once you get them, you won't need to pay others to make you enchants, you can disenchant all the BoP quest rewards in Northrend for really good money, you can DE any blues or purples from heroics, and tailoring will give you a passive skill that grants a higher drop rate on frostweave cloth from mobs that can in turn be made in to gear that can be disenchanted. Also, the specialty cloths you will be able to make can be sold for a decent amount of profit every 4 days.
As for choosing professions that are easy to level up, skinning would definitely be one of them. You are going to kill A LOT of beasts through 80 levels, and nearly all of these beasts will be killed as part of a quest.

Nah, j/k, I do love engineering on my lock, but if you do decide to level it, mining is a must.

I've personally got Skinning and Herbalism (also levelling, currently 51). Skinning is ok for making money, but the profession bonus of extra crit is kind of pointless since I'm affliction.
However Herbalism is a total goldmine, and the heal over time is fantastic right after Life Tapping. I literally have nearly 800g, the majority of which was earned from selling stacks of herbs on the AH.
