To be uncrushable, you need to keep shield block up at all times. Blocked attacks can't crush. Shield Block will put your combined dodge/parry/block to over 102.4%, which is the total you need to push crushing blows off the table.
To be uncritable, you need 490 defense. This isn't a cap, defense continues to give dodge/parry/block after 490.
