really it all depends on what you are more used to and like more. I leveled 70-80 prot cause i got used to playing it. I did try Arms during it cause one of my good friends ran Blade Storm arms, and worked really well for him. All 3 trees will level you quickly if you can work quickly. DPS might be able to help you when you need to get a group for the instences/group quests. But its all really up to you.
