What stats is the minimum for kara? How much def, armor and hp should i aim at?

415 def + 3/3 Survival of the Fittest, ~20k armor, ~20% dodge, 12k hp (unbuffed). The more the better, obviously, except for def which you wouldn't need more of even in BT.

Just as a quick addition to this, completely unbuffed my bear form is at 20k armor, 423 defense (too much, I know), 23.5% dodge, 12,877 hp, and 979 ap. The one thing I have trouble with is aggro generation from missing attacks.
That's right - I occasionally lose mobs because I can't maintain aggro due to misses. I should probably lose a little defense, since I'm well over the level for crit immunity, and add a bit more +to hit.
It's interesting to be in that position after working so hard to find dodge/defense gear, but something to remember is that Violet Eye rep gives a great defense ring that upgrades as you gain rep. Be sure to get and use it. You shouldn't have trouble filling out the rest of your gear slots with +def gear and related enchants too.

The argument is that while Defense skill gives Dodge, Parry, Block, ToBeMissed and -ToBeCrit, we can only get Dodge, ToBeMissed and -ToBeCrit from it. We also get significant Dodge from Agility and so, often, don't need to rely on Defense as a statistic from which to get Dodge (nor is using Defense for Dodge a very good cost:benefit ratio, anyway); so, that leaves it as more or less a way to generate ToBeMissed and -ToBeCrit. As Resilience has a much lower cost on the item budget and has a much lower Rating:-ToBeCrit conversion, it's really quite good as a stat to use for achieving and holding uncritability.
Now, there are still some things to consider. Blizzard knows all of this and so they create Leather items that have Resilience that are obviously more Druid tank oriented than other Leather items. For example:
This
Vindicator's Dragonhide Belt
is a good tanking belt.
This
Vindicator's Leather Belt
is not, so much.
Using Resilience doesn't mean you can use
any
item with Resilience to achieve uncritability and call yourself smart. As with anything, one still has to select gear intelligently :).
For Druids, I think anyone that snubs Resilience as a method of achieving uncritability would have a hard time really defending their position.
