There seems to be some interest for this, so I thought I'd compile a list of it. I aim to list the very best gear you can get in each slot without Arenas, Heroics or excessive reprewards.
Yes, there's a couple of reprewards here, but not a lot. You'll need two exalted factions - Cenarion Expedition and Aldor / Scryer (and honestly, you *can* get by with Aldor / Scryer at honored). Also a little bit of battlegrounds, but again... not a lot.
I'm not listing any BoP craftables either, nor any crafts that need mats from more than pre-heroic/kara play (except the Darkmoon Card, which can be bought).
I'm going to list one item pr slot (pretty much), the item I consider the best, with the appropriate enchant and sockets.
So, here goes...
Head:
Stylin' Purple Hat
(crafted) with
Glyph of Ferocity
(CE revered) on.
Neck:
Necklace of the Deep
(crafted) with 2 x
Shifting Nightseye
in it.
Shoulders:
Shoulderpads of Assassination
(drop, BoP) with
Greater Inscription of Vengeance
/
Greater Inscription of the Blade
(Aldor/Scryer exalted) on and 2 x
Shifting Nightseye
in them. If you find yourself with more honor and badges to spend, you can go pick up the
Gladiator's Dragonhide Spaulders
and socket them with a
Delicate Living Ruby
and a
Glinting Noble Topaz
.
Back:
Thoriumweave Cloak
(drop, BoP) with
Enchant Cloak - Greater Agility
on it.
Chest:
Heavy Clefthoof Vest
(crafted) with
Enchant Chest - Exceptional Stats
on, 2 x
Glinting Noble Topaz
and a
Shifting Nightseye
in it.
Wrists:
Vindicator's Dragonhide Bracers
(BG) with
Enchant Bracer - Stats
on and a
Delicate Living Ruby

Hands:

Legs:

Iron Band of the Unbreakable
(drop).
Trinkets:
Badge of Tenacity
(drop, BoE).
Darkmoon Card: Vengeance
(drop BoE/craft/quest).
Weapon:
Earthwarden
(CE exalted) with
Enchant 2H Weapon - Major Agility
on it.
Untill you reach exalted with Cenarion Expedition, the
Braxxis' Staff of Slumber
is a viable choice. Same enchant, but you may have to pick some other enchants on other stuff to reach uncrittable. Remember - 2.6% + 3/3 SotF. Defense or resilience.
Idol:
Idol of the Wild
(quest) or
Idol of Brutality
(drop, BoP, solo farmable @ 70) depending on rage starvation.
Be prepared to spend quite a bit of money and/or time on this, as some of it is quite expensive stuff.
If you rustle all this up, you should be in the vicinity of 25k armor, 13k hp, uncrittable with 3/3 SotF and 37ish% dodge selfbuffed without pots, foods, flasks etc. More than good enough to tank through most, if not all, of Kara. That's if the calculations at warcrafter.com is correct. Shouldn't really be far off anyhow. You should be left with 135 defense rating, 45 resilience (63 if you got the pvp shoulders).
Don't cheap in on gems, don't cheap in on enchants. If you wanna raid seriously and you're serious about raiding, go farm the money.

As far as I'm concerned, that set is missing 20 defense rating to be uncrittable. However, you can get that easily by just replacing a few agi/hit gems or a head or shoulder enchant with a defense version. Other than that, seems pretty perfect to me.
edit: Oh yes, I totally forgot about the resilience. Sorry.

The resilience on the couple of pvp items should cover what's missing for the def if I'm (read: Warcrafter.com, which I used for counting for lil' lazy ole' me) not mistaken. I didn't do a countup myself, I "trusted" the Warcrafter.com site. If there's anything missing one should switch the enchant on the hat for the KoT exalted enchant and the shoulder enchant for the Aldor/Scryer exalted def enchant as you say hezec, as the ones there are purely TPS enchants at the moment. I'll do a countup and get that in there if needed. Later. ;-)
And yes kareltje, I know the gladiator set isn't there. If you'd care to read what I wrote up top this is meant to carry as little pvp baggage as possible really. Some people actually have a hard enough time rustling up the honor points just to get them bracers and belt...
I tried to keep this as pvp free as possible and stay away from anything that smelled like heroics. It's not meant to be complete. It lists one item for each slot for heavens sake. It's a start for those who would like it.
But you have a point, resilience gems are nice if you need more for crit immunity.
Edit: And the problem with Emmerald's list is that the update to 2.3 is *coming*. It's been *coming* for a while. Other than that I agree with you. It's a great resource and I've used it quite a bit for both my tanking and my dps needs through time and levels.

Indeed Nab. I fully agree with you, just didn't think of that. I'll do some expanding on my list I think...
Also, after counting it up, there's 135 def + 45 resilience on the gear, which should definately leave you uncrittable with 3/3 SotF.

are also easily attainable quest items giving you a huge amount of armor. If you go for the defense enchant on your bracers and def shoulder enchant, you will easily make up any def or agi lost from getting the PVP items for those slots. That way you can spend the honor points on another item, or save them for later, and you don't have to worry about an instnace drop.
On another note, are there any other suggestions for trinkets?

I personally prefer the glyph from CoT on head instead of the CE one.

Helps for getting crit immune, the additional dodge rating is nice, and its VERY easy to get the rep from CoT.

I totally agree that the glyph of the defender is a good choice if you're struggling with crit immunity. However, with the heavy clefthoof set available that really doesn't become an issue untill you start swapping out those.

If you're going to be tanking heroics you'll need .2% less critreduction, and to go against my own advice up there, I'd actually put 12 stam gems in as much as possible. Lowers your dodge, but sure gets your hp pool up quickly. The recommendations in the initial post are there to meet the color reqs for socket boni.
