Need some info (PVP)

Im asking my questions here because I see more informative posts here instead of the typical OMG NOOB L2P posts that you find on the WoW forums.
So my questions are in regards to gearing up for endgame PVP. Im 51 now and see myself going into the Outlands probably within a week, my current professions are herb/skinner for the cash. Im currently working to the 41/20/0 build and don’t see me changing right now.
I would assume getting honor for S1 and BG gear is a first priority but should I do most of my work on obtaining honor at 59 or 69. At 69 I face 70s in AV and Im sure that wont be fun but the honor gained is greater at that level, so Im not sure there.
Should I change professions to like engineer for ammo/weapons or leather working for armor or is this not a major concern for PVP since I will be getting most gear from PVP action and just stick with the cash professions.
Is there any gear that I should try to get from heroics? What trinkets are good recommendations to have, any card decks?
Pets, currently I have a cat that I trained in the Nelf noob land. I pumped his points into armor/stamina he has bite, growl, claw and dash. I plan to cap his bite, claw and then whatever points I have goes into his armor and stamina. He also has cobra reflexes. Any recommendations on an endgame PVP pet and the best way to set him up?
Finally is there any factors or considerations Im missing? I would like to have a solid plan of action so any input would be appreciated.

41/20 is a great build, congratulations!
You've really given this some thought and that speaks volumes, looking for a PvP guild on Stormreaver? ^_~
Saving honor now is very smart, play the battlegrounds whenever you don't feel like grinding and keep hold of those marks. Getting marks as a 69 doing battlegrounds is a lot easier than doing them against the full-geared PvPers you'll encounter regularly at level 70. Our levelling members are advised to hit the 100mark limit before they ding the final level, and most bank at least 20k honor prior to hitting 70.
If you plan on making PvP your focus (as well you should, muahaha!), then rely on it for your gear. Just as a raider wouldn't take leatherworking when looking at doing instances for t5 armor, you should let what you want to do dictate your direction. Take those professions that seem most interesting to you and fit your playstyle. I used to have leatherworking / skinning just for profit, now alchemy and loving the free potions, the ability to create flasks for PvP situations (persist through death) and the Mad Alchemist's elixir buffs.
If you're a night elf, using cats is very smart and by now you've noticed the advantage in all of the battlegrounds. I will only fault you for falling to the hands of the Alliance instead of the Horde, but if more players like yourself took the time to think things through PvP would only be that much greater. Your pet skills are dead on, though remember to turn off growl in the battlegrounds and arena, it just wastes focus. Also (YMMV warning), most night elves and cat users don't train bite. Claw has no cooldown so it can be your one and only attack for great effect. Not being a NE and thusly not seeing it myself, I can't vouch for this advice, but my scorpid's claw seems near permanent with my 41/20 build.
