Random thought, I think we all wasted a perfectly good plot right at the beginning.
Given that all the Warcraft was made up by humans and for humans, all sentient races are something we can relate to. Thus, it would make some sense for us to transform into other sentients upon arrival.
Also, being reality-warping planewalkers sucks if you only get to live several decades. I say we set out to find a way to extend our lives.

I honestly like my idea;
Azeroth is an actual planet somewhere billions of lightyears away that was somehow 'channeled' by people on Earth, similiar to our characters.
