Pretty much mine every deposit you see. Turn them into bars when you need to and if possible sell to other miners in the guild and in the AH. Just because your in a guild doesn't mean you do it free. Rule of Acquisition #6, "Never allow family to stand in the way of opportunity."
Both bars & ore can be sold at the AH to players looking for mats or to level up their professions.
As for blacksmithing, look for patterns that display ORANGE in your blacksmith window that have the fewest (or cheapest) materials to make, then create them. This levels your profession and gives you access to "much more better" stuff as time goes on.
