Well, as for why you are poor, you took what are probably the 2 most expensive professions in the game to level up.
Engineering has some very nice & useful items in it but it can be a huge money sink & it ends up being an even bigger one than normal if you don't take mining to support it.
Enchanting will make little to no money until the late levels unless you use it almost exclusively as a gathering profession (disenchanting items & selling the mats on the AH).
As for which professions make the most money, your best bet is to take 2 gathering professions & sell everything you get from them.
The most common choices are herbalism/skinning & mining /skinning, the reason for this being that both herbalism & mining use a tracking ability to help you find ore & herb nodes but only 1 tracking type can be active at a time.
As I said earlier, you can also try using enchanting for it's disenchant ability but given your situation I would suggest that you stick with the basic recommendations for now.
