I'm not into big PVP but for 2v2, 3v3 and Battle grounds the best weapons are supposed to be maces, primarily Thunder, Deep Thunder, and Storm Herald.
For 5v5 however, sword has been claimed to be better with merciless gladiator's great sword.

About the crit thing: 30-35% crit chance (buffed) is ideal for a warrior with flurry, since that will garauntee that flurry is up most of the time, increasing your DPS significantly. This also counts for arena. It is true though, that stun is prefered in 2v2 because you will quite often need to stun the healer in order to kill him. Swords are just great for 5v5 and raiding because it will give you extra rage, extra damage, and extra proc chance on mongoose or any weapon effect.
Personally i think swords are for pallies because they tend to have faster weapon speeds, like 2.60 to 3.40. that's nowhere close to warriorish

As I recall reading some math a long time ago, Sword Spec beats Poleaxe Spec in terms of damage after hitting 30.00%+ Crit.
People swear by Maces for now as you can practically keep repeatedly interrupting healers in PvP through the sheer amount of stuns (Deep Thunder/Stormherald+Mace Spec=~13% chance per swing to stun. 2.2.3 slightly nerfed this as the % chance to proc is now based upon the weapon's base speed. Prior to this patch, Flurry/any other weapon speed increases still kept the same % chance to stun per proc due to the PPM basis of Mace Spec.)
But, if your PvP wins rely solely on a random stun proc, you might need to reevaluate how you play.
