Naw, the cheesiest thing they could give mages would be a lamp to rub and wish on, casting a random warlock, mage, or priest spell.

Warlocks and Paladins have their own mounts. Why not us?
Because Warlocks and Paladins are the best classes. Rogues are cowards, Hunters are idiots, and there's a reason why no amount of "intelligence" will do a warrior any good. Druids are close to the Paladin/Warlock level of amazingness, so they get to shape shift, and fly two levels earlier than the rest of us.
Every class getting their own mount is just more of the "Mommy says I'm special" mentality that makes most kids these days into insufferable little snots. Yes, you're unique. Yes, you're the most important thing in your parent's lives. But when mommy's license plate is "BRADSMOM," do you think that might be sending little Bradley the wrong message about his place in the world?
So, in short, I think your idea sucks, and sucks terribly. If you play a Rogue, Mage, Warrior, Shaman, Hunter etc, well, your class is basically defined as "miscellaneous DPS." You're interchangeable, and if I can't find a Hunter for the 5th member of my party, I'll just take another mage instead. No big loss.
(Like the OP said, this post is
Just for fun.

One thing. You are a little mixed up. Warriors and Priests are the essential classes, not Warlocks and Palidins. Warlocks and Palidins are just more DPS classes. So it would make sense for Priests and Warriors to get special class mounts.
The only reason I know of why Warlocks get a class mount anyway is because they, unlike Hunters, must pay gold for each and every pet skill rank. Palidins have no reason to get free mounts.

Warriors and Priests? Please...Perhaps that's how it was intended, but when was the last time you saw a warrior with a shield on his back? Oh wait, that's right, they're all carrying big two-handers or dual-wielding. No shield, no tank. That's all. Perhaps I should have clarified; outside of tanks and healers, everyone else is basically just the same character with different pixels (when it comes to instances/raids), and most of the warriors I've seen fit into this category.
PS. Paladins do not get free mounts. By the time you're done paying for and completing the paladin epic mount quest, you've spent close to 540g, and you could have farmed more than that in the time it took you to get a group together for Strat or Scholomance.
