Most of the top raid healers out there are holy paladins. Not priests or druids. as far as I can tell druids and priests are about 100 tmes better at healing than paladins. Paladins are very limited in how they can heal. they have no heal over times which really sucks for them. people who want to heal in raids and instances should roll priests or druids instead. My group always ends up wiping no matter how good our pally healer is just because they really suck at healing anything but in battlegrounds. I think that if all of these outstanding raid healadins rolled priests druids, or even shamans instead they would be much better at healing.

You realize that you just gave holy paladins a huge compliment. You pretty much said their healing spec sucks and then you said they are the best high end raid healers.
The reason you need holy paladins is because they can heal forever and not really worry too much about mana. That and any good paladin healer knows that their focus is the tank or the target that is going to be taking the most damage. Without a good paladin healer tanks die in a lot of high end content.

Sadly you're right, most players still can't get over the old thought that paladins are only useful as healers. This works to your advantage, but many paladins enjoy using abilities besides flash of light, and this mentality is very frustrating for us.

And tanks...as much as I hate playing Retribution, it makes me really mad when I see some "witty" remark about the retri paladin that had just left the raid, and how he had "been useless anyways".
On to why healadins are so popular...they are new. Until a few patches after TBC paladin healers were utterly useless. Plus, they (we) are easy to play. And we wear plate. Me no squishy.

Generally priests are better utility in shadow form, and boomkins and spriests will usually out dps ret pally's.
Never been outdpsed by a shadow priest in same level gear tbh, and i've not had the pleasure of raiding with a boomkin for a while so i can't gauge that.
