Unholy Sub-Spec Frost is the best DPS Spec until "BiS Loot". Basically until you can reach the ArP Cap of 110(?) then its Blood, at least for Single Target.
Actually, Unholy-Blood outperforms Unholy-Frost with a normal weapon. Proc weapons change that.
ArP cap of 110 what? There is a hard cap of 1400 (1260 for Blood) that any rating beyond that will be worthless. You can't ignore more armor than is present.

DW Frost is simming to more dps then both blood and unholy but honestly its a negligible difference. Bring what your raid needs or if they don't need any of the buffs specifically pick whichever you enjoy.

Yeah, since we didn't have the 10% atk pwr buff I went Blood, my ae dmg sucks but thats not too important on boss fights and the buff is nice
That is partly why Blood is the bottom of the three specs right now since some encounters require AoE, which Blood is weak at. Also Blood has very high gear requirements to beat Unholy (basically at least half 277 gear).
Note in your raid, if you didn't have Windfury or the magic debuff, then Blood wouldn't be the best spec (for melee windfury>10% AP).

They all performs about the same in BiS. While Unholy is usually better at lower-mid level gear with lower armpen. Play style of all specs are different. I think non reaping Unholy is the most straight forward.
In general, most of the buffs that each spec provides are replacable and does not stack with the others.
Windfury totem = IIT
Unleashed Rage = Abomination's Might = Trueshot Aura
Ebon Plaguebringer = Earth and Moon = Curse of Element, you can make the argument that EP is better for AOE situations.
Horn of Winter = Untalented Strength of Earth < Talented Strength of Earth.
So basically 1 enhancement shaman provides the same (or better) buffs as having 1 Blood DK and 1 Frost DK.
Note that Icy talon itself does stack with IIT or Windfury in 3.3.3.
My recomendations would be this if you want the "most dps" for your gear level:
Fresh 80 = go blood and grind heroics.
T8/T9 = go unholy or dw frost depending on your preference
T10+ = anything will do.

I have loved my Blood spec DPS since I started and I am unsure as to whether or not the extra few 100 DPS or so would make that much of a difference to the raid party to change to Unholy. Also if I decide to change to unholy then I have to go through the whole reaping/no-reaping thing.
I do like to see myself get a high DPS but I am not that hung-up on figures, to be upset if I do not top the charts at any point.
