I always go with Herbalism+Skinning or Mining+Skinning. Can't track two types of things at once (herbs and veins).
Skinning can be plenty profitable if you skin the right things. Like clefthoofs. Clefthoof leather sells for 60g a stack on my server. And you're going to kill tons of beasts anyway, may as well skin them.
I'd go with Herbalism rather than Mining now. People are going to be buying tons of herbs in WotLK for the new inscription profession.

Unless you can get a Gatherer dump from somebody I would suggest Mining + Skinning so you don't have to track two things at once.
If you can get a good amount of nodes do both and make a macro that switched between the two tracking abilities and spam it when you farm.

Mining/herbing is probably most profitable, from an Outland point of view anyway. Skinning not so much, or at least, it's not beneficial to the only toon with skinning I have (Outland leathers don't sell so well, it seems). However, there are three professions that benefit from Mining, and precious stones and primals are bought by a lot of people to make/enhance their gear. Anyone who raids needs pots and flasks, and so herbs generally sell well, and the motes and primals of Life you gain through herbing generally find a market too.
As for the tracking thing: just hotkey both the "find ", and switch them while you run by or fly over. It works fine. (edit: I use Cartographer specifically for mining/herbing; you can have it make routes for you to take, which make it easier to do both things at once. Of course these routes work just as well if you only have one of the profs)

In my experience (on the alonsus-eu realm) skinning and mining are incredibly profitable to do
while you're levelling up
but that herbalism becomes more profitable than skinning at the endgame because hey, people always need potions even after they've got their crafted LW gear.

No, wait -- it's very bad advice. Take Skinning and Enchanting (so you can d/e for mats) --- Bwahahaha! (See, it's funny because the fewer people take herbalism/minig, the money money
