My 74 warrior leveled as Prot (except for a brief stint as Fury in the 50s). It is a little bit slower, but barely noticeable. And, personally, I find Prot a lot more fun than Fury.
You should probably find a one hander and shield now. It seems wrong, but as Prot, your shield can account for a pretty large portion of your damage (and threat, if you're in an instance). Stay in Def. stance, spec into Imp.
Revenge and start putting points in One-handed Spec as soon as you hit 35.
Instead of a "rotation," think of things like "priorities." Revenge and Shield Slam will make up the majority of your damage while soloing, so those are your highest priority. (Remember you can use
Shield Block to get a guaranteed Revenge if you need to.) When neither of those are up,
Sunder Armor. -20% armor is a huge DPS increase, and it's a good habit to get into for later when you replace it with Devastate.
Weave in your Battle and Demo shouts when you need, and
Thunder Claps if there are multiple things hitting you, it can slow down incoming damage pretty significantly.
Before you get to 51, this macro is your friend:
/cast Battle Stance
/stopmacro
/cast Charge
/cast Defensive Stance
If you're out of combat, swap to battle stance. Then wait 1 second (the CD on stance dancing) and hit it again, you'll charge and swap to defensive.
Once you hit 40, you
need to be using a One-hander and Shield. At 40 you get
Shield Slam and by then you can have 5/5 in
One-handed Weapon Specialization which will eliminate (and then some) the penalty of being in Defensive Stance.
This is the build I'd aim for at 40.
By 50, you can
spec into
Devastate, which replaces Sunder as your spammable ability and you can actually burn things down pretty fast. (At 51, take
Warbringer, it's amazing.)
By 60, you should have filled out the bottom of the
Prot tree.
Sword and Board turns you into a Shield Slam machine.
Once you get Warbringer, you can use this macro:
/castsequence reset=15 Charge, Intercept;
/cast Intervene
You can even use it to essentially "charge" twice and round up a couple mobs.
At 70, something like
this is pretty cookie cutter, leading towards the "Deep Wounds" Prot spec. It's slightly higher damage for (very) slightly lower survivability. Absolutely fine in most cases.

tl;dr:- Use a one-handed weapon and shield.
- Stay in Defensive Stance.
- Spec into Imp. Revenge and One-handed Spec.
- Use Revenge and Shield Slam every time you can. When you can't, use Sunder (until you replace it with Devastate)
- Have fun soloing all those (Group) quests!*
*Seriously, there were maybe
two quests I couldn't quite solo between level 40 and Dragonblight.

I love Prot. There is something so fun about Shield Slam crits to some mob's face. Once you pass 60, rage is much easier to come by, and once in a while you'll luck out with the RNG and you can do things like
Devastate (Crit) -> SnB -> Shield Slam -> Revenge (Crit) -> SnB -> Shield Slam -> Devastate (Crit) -> {dead mob}
Or Charge into a group, hit Thunder Clap, move them all in front of you, hit Shockwave, and so on...
Once in a while, for fun, I'll keep something stunlocked with Concussion Blow, lucky Revenge stuns, Shockwave, etc.
So Kaitha, no, we're not
warlocks, but it's not pure masochism, either ;)
