These stay green all the way to 600 mining skill, and give 1 point per node all the way up to 580. To this date, it doesn't seem like they drop anything other than ghost iron ore.

So far as I've seen, you can't get gems just from mining ore.

There is, however, a mining pick that allows you to receive gems from mining nodes: Ancient Pandaren Mining Pick. This item can be picked up from various locations in the Greenstone Quarry in Jade Forest.

the best place ive seen to farm this stuff is around the tian monastery, and in the greenstone quarry, which is under the tian monestary.

Confirmed, the monastery is an excellent place to mine ghost iron. Only have to deal with mobs in the quarry underneath, and they are well spaced so they can be easily taken out. After one hour of mining in the area I was able to gather 469 pieces/ 23+ stacks of ghost iron ore.

I have found that if you just need a quick stack of Ghost Iron then you can fly to the Tu Shen Burial Ground in Vale Of Eternal Blossoms right by Mistfall Village and there is usually enough of them within the subzone for about a stack and a half of ore.at any time.

These ore nodes are literally everywhere. If you're a 90 powerleveling mining, and you have Panda-land riding, then just auto-fly around Pandaria and after an hour or so, I personally have atleast 75 ore, with the guild perk. Additionally, along with every 100-150 ore (nodes) I mine, I receive an epic blue gem or a green gem, and no, I do NOT have the Ancient Pandaren Mining Pick, but a Gnomish Army Knife.

In Pandaria, there are two items that can help you with earning money while mining, if mining for the gold of course.

The Ancient Pandaren Mining Pick has a chance of mining rare and uncommon gems along with the ore from the ghost iron ore deposit. (Also works for any other ore in Pandaria)

The Mist-Piercing Goggles allows you to see extra mining nodes and herbs in Pandaria.
Note: This item does not need to be equipped to gain the effect of seeing extra nodes and herbs.

I've noticed a significant difference in the amount of ores I got from 1 hour in Valley of the Four Winds with the goggles and pandaren pickaxe than without the goggles and pandaren pickaxe. The goggles are BoE and you don't need engineering to wear them, only to create them. The mats are as followed:

Spirit of Harmony x2
Ghost Iron Bolts x8

Ghost iron deposits are really easy to find. They are all over Pandaria. So I strongly suggest that if you have a level 90, then get your mining up, because this is a good way to get gold. Ghost iron nodes are not only easy to find but also they sell for an average of 47 gold a stack.

if you are leveling mining or under level 90, i suggest the mine under Tian Monastary, because the mobs are only level 85 and you can mine them for extra mining levels. if you are 600 and 90, i like to use the windward isle, since its small and you can fly around it, unlike the cave, which you have to walk. the only problem with the Isle is that there are alot of level 90 mobs, and some nodes are underwater.

Tian Monastery is definitely a great place to farm Ghost Iron, but the problem is everybody knows it. There's too much competition there on my server. I've found more luck at Kota Peak in Kun Lai, specifically the cave with all the Kafa-Crazed Yetis, especially now that there's not many questers in the area. You do have to kill the mobs but they're a breeze, and for your troubles there's about 10 nodes in there. Every time I've gone there at least two of the nodes have been Rich, resulting in a nice quick haul.

The best place I have found is Windward Isle, I get stacks and stacks of Ghost Iron Ore very quickly as the re-spawn rate is extremely quick. Not only that but you get Trillium Ore too.

I can make 3k in an hour easily. Well as long as no-one else is mining there too! :)

Note to those with Jewelcrafting who are searching for some information as I was about obtaining rare, MoP gems:

When Prospecting, the best ore to receive rare, Mist of Pandaria gems is either Black Trillium Ore OR White Trillium Ore, with an average, gem, drop rate of 17% each (according to Wowhead).

This ore can be obtained directly via two methods:
1) These can be mined from two, rare-node-spawns: Trillium Vein or Rich Trillium Vein.
2) If you are Revered with The Tillers, plant Snakeroot Seed for random chances at obtaining either type of Trillium Ore per plant.

This ore can be obtained indirectly by executing two steps:
1) If you are Revered with The Tillers, plant Songbell Seed to farm Mote of Harmony (yields 1 Mote per plant) and eventually make Spirit of Harmony to use as
currency in the next step.
2) Purchase a stack of 5 Trillium Ore in exchange for 1 Spirit of Harmony.

Here is a quick list of each rare gem for easy-viewing:

Imperial Amethyst

Since Trillium nodes are rare spawns, a more surefire way to obtain rare, MoP gems is through Alchemy, specifically through Transmutations.
Being a Transmutation Master will result in the highest transmutation yields. Here is a quick list of each transmutation recipe for easy-viewing.

NOTE: Each recipe requires a Golden Lotus and the Uncommon version (listed below) of each, rare gem.

Tiger Opal
Lapis Lazuli
Sunstone
Roguestone
Pandarian Garnet
Alexandrite

Transmute: Primordial Ruby
Transmute: Imperial Amethyst
Transmute: Sun's Radiance
Transmute: Vermilion Onyx
Transmute: River's Heart

If you DO decide to transmute and you are hard-up for Golden Lotus, you can:

Enigma Seed to get a rare chance at gathering a Golden Lotus
Songbell Seed to farm Mote of Harmony (yields 1 Mote per plant) and eventually make Spirit of Harmony to use as currency in option "A".

The least-effective way to farm rare, MoP gems is through prospecting:
Kyparite OR Ghost Iron Ore

I personally think Valley of the Four Winds is the best place to farm for ghost iron, simply because there can be multiple spawns literally stones throw away. Whereas I've found myself flying all over the place in other zones, in VotFW I can pick up several nodes in a single, relatively tight packed area. Notable clusters are next to the wall, towards Krasarang, next to the hidden masters area, singing marshes and towards stoneplow. They spawn literally everywhere else too, but these areas tend to have the highest concentrations. Between Singing Marsh/Stoneplow cliffside I was able to mine around 10-12 nodes, some of which were rich deposits, before the area was temporarily depleted.

Of course, the spawns are random and other places might be "littered" with deposits, I've also found The Heartland filled to the brim with these nodes when above areas are depleted.

This personal experience and preference comes from a about a weeks worth of farming ghost iron for Sky Golem materials. Never again.
