It would definitely have to be the Headless Horseman's Mount that dropped during the halloween event.I had been doing the quest for days and this one particular group had a priest who was INSISTING the mount would drop this group of kills... Everyone was "yeah right..." but the priest kept insisting he had a feeling it would. So we get through 4 kills and nothing but those damned rings that keep dropping. I use my quest daily as the 5th and final pull of the day for us. Drop the Horseman and lo and behold... THE MOUNT. I trounced everyone in the need roll and got the very awesome mount. ALL my friends in game were hyper jealous. Yeah... Love that horse.
Most epic loot i've ever gotten was the Mature Black Dragon Sinew from Onyxia. http://www.wowhead.com/?item=18705 Took ten tried to get it to drop, but when it did I was able to finish my hunter quest and get my Rhok'delar http://www.wowhead.com/?item=18713 Best loot -ever-. I ended up being the second hunter on the server with it. Course that was back in the day when Ony was hard :)
I don't know about drops, but i remember one of my most epic trips. I was an Enhancement Shaman, but made a viable tank so long as my friend was healer. He was a resto druid, and an exceptionally talented one at that. I tanked all instances up to Blackrock Depth as a Shaman. But i remember the fateful trip to Zul'Farrak. First, me and another Shaman had been vying for the coveted Hand of Antu'sul. We beat her and she dropped her awesome mace. Unfortunately, the other shaman DC'd during the fight. i waited as long as i could before rolling need. Little did i know how "hand"y that mace would be. Before long, i found myself on the steps where the dreaded troll invastion occurs. With my druid friend at my side, i headed into battle, killing trolls left, right, up down, backwards, and upside down. I don't know how many times i slammed with The Hand of Antu'sul, but it saved my life many times. With the trolls defeated, our group proceeded on to to face the troll priests who had caused so much trouble, promising to make them pay...
The most epic experience I've had is when a holy priest killed a BWL boss and was the only one left at the end. ^_^
My most Epic expirence drop was Bindings of the windseeker(right) from MoltenCore,it is a leagondary drop that i won! Woot i was freaking out,my heart was beating faster and faster,i was yelling JUST ONE MORE PIECE AND SOON I GET MY (THUNDERFURY BLADE OF WINDSEEKER). I almost feinted when i seen the drop and it is a 3% drop rate finally i won a roll:) but yeah that has to be My Best EPIC loot i have ever got !Zezzox
My most epic loot was in my first Mother kill for my t6 shoulder token. There were 8 shaman in the raid and the other 7 rolled and the top roll was a 97 then i won the roll with a 99. Everyone in vent went wild and i was really happy cause they are really good and look really nice so thats probably my most epic loot.
My most epic loot was Merciless Gladiator's Idol of Steadfastness because this was the last pvp item i needed to finish my pvp set. It felt good to finally buy it after countless hours of farming marks and honor to get the entire set. It felt good.

I got the shard of contempt on my first time tanking Magister's terrace. The Rogue in the party was very angry. he didn't think ti was fair that a feral druid would roll on a melee dps item. I actually ended up using it tanking sometimes, as well, when I needed threat over mitigation ( most runs ironically)
Probably the most epic loot I've ever gotten would have to be my Hunter PvP Chest about 2 weeks before WotLK came out. Although I problably should have saved the marks, this was to be my first epic item after hitting 70. I am still using it in Northrend as nothing better seems to have appeared (I am 73 atm) and still feel great satisfaction in being able to obtain right after hitting 70 (had the marks saved up from 60 AV farming).
I'd say my most epic was my guild's first downing of the wicked witch, right after getting into kara. It was down to 3 people due to futzing with the earlier fight, and I as an enhancement shaman was thrust into main healing a ret pally tank with a hunter on dps. Right as my mana was about to empty entirely, the hunter's constant *plunk plunk* of arrows finally downed her. Caster drops, wouldn't you know? :P
