My fishing is around level 208. I have Seth's graphite fishing pole, but that was a while ago, and I've left fishing alone since the Ulduar Patch. I'm trying to level it again. I know there have been some changes to the way that fishing and leveling it work, so I was wondering if you guys could help me.
I heard you could level it anywhere now (is that true?), but when I try to fish in Dalaran, I get mostly gray junk like driftwood, tattered cloth, and sickly fish. I'm trying to max it out before cataclysm.
Where should i got to level it? (Im at 208) and what equipment should i use? (lures, poles etc.)
Thanks for the help.

You get levels regardless of what you catch, as long as you "catch" something. You always catch fish from schools regardless of level. Because of this, if you want to fish for cookable fish, (like Dragonfin Angelfish or Musselback Sculpin) you can go for it immediately.
Personally I'd recommend fishing anywhere that will fulfill your goals. For example, if you want consumables to use or sell, fish in pools around Northrend. Wintergrasp is technically the best place for this, as the regular water gives all great fish, but because of your fishing skill, you'll get nothing outside pools. The other option is to level while trying for achievements. The turtle, Dalaran fountain coins, the Dalaran sewer rat (I got quite a few fishing levels on the second two) Old Crafty, Old Ironjaw, etc.
The best tip I can give you is don't fish for levels, fish for what you catch. It will make it seem way less slow.

As previously mentioned, you can fish anywhere and level nowdays.
You cannot fail to catch fish from a pool, so it is easy to maximize profit from leveling too.
(Not to mention the turtle mount may drop in Northrend)
You always could level to max anywhere, and you can get crates in pools instead of fish. It doesn't matter what you fish up though.
From what I've heard, fishing is a joke to level now a days. They decreased the amount of catches needed per level-up, as well as the cast time having been lowered from 30 seconds to ~16 seconds (effectively doubled fishing speeds). I also hear that skill is useless for anything but the quests now, as anyone may fish anywhere and not get any getaways.

You have 4 choices when leveling fishing
1. Fastest way possible - Find somewhere like the lake in the middle of mulgore where you won't be interrupted by anyone and just fish. You can level all the way to max in the easiest spots.
2. Fish for fish - Fish in Glacial salmon or dragonfish pools. You'll gain skill and gain fish that can be sold for decent gold
3. Fish to raise cooking - There is a great guide on the fishing site, but basically you raise fishing and cooking together
4. Fish for rares - You can go for the turtle mount (any northrend pool) or the pet rat (dal sewers).
or you can take the long approach like I am doing. On all my alts, I only fish for the daily. I usually get a point or two per day :) But almost all my alts have the fishing cap and the fishing line.

No, at one time you could only fish in level appropriate areas... so if your fishing was level 1, you could only fish in starting areas and main towns without getting an error message that your skill was too low.
I meant that you could fish anywhere where your skill was high enough and level to max. E.g. fishing in IF to level 300 in classic WoW. You needed approximately 92 skill points above the "base skill" of the water (which was less than zero at some points) to never have getaways, which would not yield any experience. I'm sorry for not being perfectly clear about it.
And skill comes in handy if you're trying to catch fish for cooking / achievements, as your skill in fishing is still weighed against the level of the area, and if you're too low, you'll only catch junk.
This was what I was trying to get at with my post. Since the Cataclysm patch (or perhaps before that) it seems skill has no relation to catches any more. A friend of mine levelled from ground up in Dalaran with zero getaways. Perhaps it's work in progress. I do know the daily quests need a certain skill level to unlock, but beyond that, the skill seems rather useless now.
The way I read the previous quote seems to suggest that getaways have now been replaced by junk catches, and if that's the case, my friend sort of misinformed me about what he was catching. He caught the rat long before he hit 1000 "things" caught though.
Fishing is still tedious to level, as once you get past 150 or so it takes multiple casts that increase as you level up. You'll notice I said tedious and not hard.
While I agree that they should evolve it some more (and they have, with contests, pools and "useful" rare catches), I would still say it's much faster to level now than it used to be. It's a joke compared to how it used to be.
I think that making fishing faster and thus less tedious is the wrong way to evolve it. People who fish should do it because they like it or need it, not because they feel obligated to max their secondary professions. You can always buy the "raid material" from others if fishing and cooking is "not your thing," so that's not even a discussion.
On a side note, I've found that fishing since the last patch has gotten more annoying... in that I often get a bite at the very last second of channeling, so that if I don't preemptively click the lure a second ahead of time, I'll no longer be channeling, and thus lose the fish.
I don't know how long you've been fishing, but it has been this way since classic for me. The difference is that cast times were improved from 30 seconds, to 20 seconds and now to 16-ish seconds (15?). Even if you miss one, a second cast is at the worst "as fast" as it once was.
Mats for Fish Feasts still sell very well. Probably not the best way to make money, buy when the fish sell for up to 3 gold each and you are catching one ever 10 seconds on average, thats up to 1080Gold per hour? Not totally useles...
If you oversupply, it's obviously not going to sell at all. And fishing for more than an hour it really starts getting tedious. Both you and Nipah get this a bit wrong: You were never supposed to fish from 1 to 450 in one go. You were supposed to fish and cook as you level up, and as breaks and use for the drops you got, the way I and certainly many others did it. Sadly, I see more and more fishbots in the game, and reporting them will at best get them banned for three days or so...
Sorry for the long post.

The only difference between now and before.
Before, you could sometimes get a message saying you weren't high enough to fish there... and if you could barely fish there, you would get a ton of 'getaways'... which did nothing
Now, you can fish anywhere and instead of getting 'getaways', you get grey vendor trash, but that vendor trash counts as a 'catch' so can give you skillups.

I find it a bit silly that they can get the rare catches regardless of their skill level though. I know for sure that the Rat can get caught at low level, since my friend got it before fishing 1000 items. I assume Ironjaw could always get caught at level 1 anyway. Not sure about Dark Herring or the turtle mount, but I would guess that at least the turtle mount is also catchable, since it's not a "fish."
Not really that I am too upset since you still need to be damned lucky to catch them, but I always thought those were
something for the accomplished anglers
. Perhaps it's an unintended bug from removing the getaways.
