I have been wondering, what is Dalaran going to do now that the war in Northrend is over. Will they return to Silverpine (which would seriously screw up Sylvanas as flying cities tend to be hard to invade) and reestablish their kingdom? Or will they remain in Northrend and build a new country since there isn't a large amount of competition left for nation building there?

I'm assuming until they fix the damage caused by malyagos and his flight dalaran will remain in northrend.
As far as if they will stay there permanently or move back to the eastern kingdoms is anyone's guess.

If they were to return to Silverpine I'm sure they'd land the City... I mean there's no sense in floating above your home land as the Forsaken do have Bats, and Siege Weaponry.

Dalaran's home was in Alterac.

Dalaran's home was in Alterac.
Technically it straddled the border of Alterac and Silverpine. Hence the Dalaran crater in Alterac (well, Hillsbrad now, but you know what I mean), and Ambermill (a Dalaran vassal community) in Silverpine.
If Dalaran were to return and re-land in the crater there'd be some potentially interesting consequences. Would give us a good idea of how crazy Sylvannas has gone, if nothing else. Garrosh ordered them to bring in all of the old lands of Lordaeron into the fold of the horde, but Sylvannas has basically declared that they are going to conquer everything north of the Thandol Span for the Horde. (including the former kingdoms of Alterac, Gilneas, and Stromgard)
Dalaran has been a strictly neutral nation since the end of the Third war, focusing their powers on the overall betterment of Azeroth and (to a much lesser extent) Draenor.
So Sylvannas would have to make a choice, does she cede Ambermill and Dalaran itself to Dalaran and just accept that there's part of the Northern section of EK the Horde will never own, or does she march her forces against a city sufficiently confident in their power that they parked themselves within spitting distance of Icecrown Citadel and essentially mooned Arthas.

I see where you're going with the Spitting Distance of Icecrown Citadel thing, but what I find more impressive about Dalaran is the fact it was Floating... It's a huge Middle finger for an ENTIRE DRAGONFLIGHT. So how would you go about fighting someone Confident enough to Moon The Lich King and give the Middle Finger to Malygos... Pretty bold if you ask me...

They have brass balls. Brass magical balls.
And Rhonin. Who doesn't do jack unless you read the novels. At which point you wonder why didn't this fool blink and fix everything.
During
Mage,
Rhonin and the other high ranking magi of Dalaran were too busy dealing with the aerial assaults of the Blues to actively assist with the help as the Violet Hold was broken open and dozens upon dozens of criminals spilled forth and began to attack everything.
