When a
really good
rogue decides its my time to die, there is almost nothing i can do to avoid this, with my trinket/racial ready and running with the voidy out for the shield.
1 - Ganks or unfair situations are NOT a meaure of skill. NOT AT ALL. Rogues DO have an advantage - Stealth - for ganking and battlegrounds, but that doesn't make them unfair. If you are comparing classes compare them in fair scenarios.
2 - You are assuming we'd laugh at your armory? Why? If you're as well geared as you state, there is nothing wrong. If you are prentending to have a lock you do not have... well...
3 - If he is that much of a really good rogue, chances are he outplayed YOU. Yes, he won, by skill. Why does that mean it is by class? if you consistently beat 60% of the rogues on a sub-par spec (not saying your affliction build is wrong, just that affliction is less powerful VS rogues), then what is your problem, really?
And we are all still waiting for a screenshot of that ridiculous damage.
Let us assume you have 20000HP. 850 resi. Let us also assume the rogue is gemmed for ArPen and is ignoring all your armor (simplicity. I know it is stupid). (and you don't spec into demonic brutality for improved shield? why not? better shield is better.)
You have 20000 HP and sacrifice for a 10k shield. Soul link mitigates 20% of the damage. Resilience mitigates 7,5% of the total damage and 15% of the critical damage. Assume the rogue deals, of his total damage, 50% as critical strikes. Stunlock lasts realistically for 10s (if you don't trinket Blind and stop his restealth, you failed). (you can stop his vanish, if he doesn't blow cloak) (You can pop healthstone even if he cloaks+vanishes and get a circle down if you were caught up unaware. That means he will come next without cloak and vanish, leaving him highly exposed)
You are assuming, thus, that he did 30000*1,2*1,075*1,075=41602,5 damage. In a SINGLE stunlock. IN 10 SECONDS. USING COMBO POINTS TO STUN. 4160 dps. WITH NO BUFFS (because if you are factoring buffs, then lol.) And I plain and simple ignored all your armor and glyphs... Now tell me, is this even possible? not even able to eviscerate more than once, because you'd lose points to KS?
If he begins by ambush, laugh at him as you instant fear, CoE, DoT and teleport to safety. He just blew up cloak+vanish or he'll suffer your many dots.

I think there's only a select few classes that Rogues don't have much issues with.
#1: Hunters. Low survivability class, crap trap that gets trinketed out of. Scatter Shot may get you... IF we didn't DoT you up already. Sprint and chase us/Blind if we attempt a kite, CoS Serpent Sting and Black Arrow, Vanish out and hit Ambush. You win!
#2: Druids. Wound Poison in PvP is a must. Reduces their healing by HALF. Kick any casts they use, Vanish if things get hairy, CoS Moonfire if needed (Though I don't see Moonfire getting used by Restos too often in BG's... Arena diff story). Cyclone? Dunno what to say to that.
#3: Non Frost Mages. Yes, I know there's not much of them, but they have no Ice Barrier. They have Mana Shield, Blink, Slow (Arcane only), sheep, Blast Wave (Fire only), Dragon's Breath (Fire only), and Frost Nova. Sounds daunting, but usage of the right skills at the right time makes them easy as pie really.
The other classes, however, have mitigation abilities, burst, and ways to keep the Rogue unstealthed OR survive their openers.

I don't know about you guys, but my resto shaman (with stacked resilience) does great against rogues. I drop earthbind and cleansing, make sure my earth shield is up and stays up, and put my back against a wall so I don't get sapped. All I do is outlast the initial burst; rarely do I trinket it. Then I cast a riptide, maybe an instant healing wave if they are good, and I'm at a reasonable health level again. It's also fun to put a flame shock on the rogue so that it can't stealth and kite it with ghost wolf. But one of the best anti-rogue defenses is resilience.
Whoever the rogue was they sucked that can very easily be countered as a rogue wound poison and crippling will slow your healing and movement and CoS flame shock vanish when close and do another burst of dmg Shamans are very easily takken down for me and i have almost 0 trouble with them.
The classes i do have trouble with however is a Holy Pally. <---- the heals
Frost mage. <--- The Shields
and a Disc Priest priest. <--- Shields and dots combined with penance is a good combo against rogues

Rogues are really just a nuisance now.
They aren't what they were in BC (which was OP).
Mace stuns + current rogue stuns + armor penetration working strongly against cloth
(lol, just picture dual-wielding frost dk's with mace stuns)
Anyways rogues still have cheap tactics but there are many methods of getting out of them for any class now. Rogues aren't saplocking equally geared players from 100% to 0% alone anymore.
Maybe 25% but that is why I believe blizz is attempting to balance around bigger battles.
aka rated battlegrounds because rock, paper, scissors takes priority over team coordination when very few players are dueling.
2v2 changes anyone?
Rogues aren't that great in Arena.
Rogues have issues with GOOD Hunters.
Then why is it that Rogues are the staple of most arena teams? RMP? RP?
And the good Hunters comment: There's about 250 or so that can be considered "good".
