One new profession is being added with Wrath of the Lich King:

. Scribes (as they are called) can
mill
herbs for reagents (similar to how a jewelcrafter prospects raw ore). Expect

Herb Gathering
to be a popular pairing. With Inscription, players can create
glyphs
and customize certain aspects of abilities (such as cooldown, or effects such as stun, etc.). Glyphs can be traded and sold at the auction house.
Players may add up to 6 glyphs to their character: 3 Major Glyphs and 3 Minor Glyphs. An additional Major Glyph slot can be unlocked if you're a scribe. The Major Glyphs provide major upgrades to existing spells, while Minor ones provide less powerful upgrades. The glyph interface is available as a new tab from your spellbook.
Professions in Wrath of the Lich King
Blizzard has raised the a skill cap to 450 (up from 375 in the Burning Crusade), and intends to make leveling from 300-375 easier.

Tradeskill Linking
The tradeskill linking system has been changed to allow players to better peddle their wares in the Trade Channel and directly to other players. Shift-clicking a profession from the General tab will create a chat link that, when clicked, will open a crafting panel that details all of the recipes you know and players will be able to browse required materials.
Passive Bonuses
Blizzard has also implemented a passive bonus system that will award players for having a particular profession with a buff.
Alchemists will gain
Mixology
which grants them an increased effect when you drink any elixir or flask you are able to make (so far it is being reported as roughly a 20% bonus to the effect).
Miners will gain
which grants a passive +500 health.
Skinners will gain
which grants a 25 critical strike rating bonus.
Herbalists will gain
which heals the herbalist for 2000 over 5 seconds, and has a 3 minute cooldown.
