Kimchi (also sometimes spelled Kimchee) is a fermented Korean side dish made of vegetables.
Scallions are one of the more common seasonings/flavorings you'll find in IRL Kimchi.
Traditionally, Kimchi was fermented in jars that were buried during the process.

As far as Warcraft is concerned, Night Elves have a long history with Kimchi, and there's even a Darnassus cooking daily involving it, wherein you dig up jars of buried Kimchi (Pot de kimchi enterré), Le secret pour un kimchi parfait.

You can also keep this stuff with you forever, and not worry about it going bad. That could be said about very few foods in WoW, though the other Kimchi varieties (e.g. Kimchi de chou) certainly count.
