Thread title has the question. Should I be using a fast (1.60 to 2.20) 1-hander, or a slow (2.50 and above) 1-hander?
I'm currently using
Crescent of Forlorn Spirits
.
I know using faster ones could be good for more Seal of Light procs, but what could come from using a slow 1-hander?

Doesn't matter.
Go with whatever has the best tanking stats.
You'll mostly come by faster tanking weapons because warriors luuv that and it doesnt really matter to paladins.
A faster weapon can have a slight edge though. When AoEing reckoning will more than often double proc so having a faster weapon may allow you to use up more reckoning procs without sacrificing any uptime.
But basically stats are way more important.

This exactly. If you're giving up stats for speed (or really paying any attention to speed), you need to rearrange priority. Stats first, always. :)

Considering the weapon you're using I don't think you have reckoning yet, so it's a moot point. Once you have reckoning you want to aim for a 2.6 or faster in order to maximize your extra swings. You don't want to give up a large amount of stats for a faster weapon, but with reckoning weapon speed does become a factor.
I was at level 32, using that weapon.
Right now I'm at 38, and happily using a
Reforged Blade of Heroes
:)

only wars depends on faster weapons, faster weapons mean lower damage of weapon, but warrior can spam heroic strike faster with faster weapon, with slow weapon he spam it slower, but he is doing more harder heroic strikes, but paladins dont rely on weapon speed, so choose the best :)

It's moronic to use anything faster than a 2.0 speed weapon when levelling prot AoE.
Reckoning procs ALOT and most of the time it's going to be refreshing itself so if you havn't used all the charges before it procs again. You're losing effiency.
And since you want all your mobs to die at the same time when prot AoE'ing having a hard hitting weapon is just stupid since then mobs are gonna drop all over the place.
Go for a fast weapon if possible but stats is always more important!

Go with the slower weapons, as it doesn't matter for Paladins. I actually thought paladins benefit more from slower weapons due to paladin mechanics. As most have pointed out, warriors benefit most from faster weapons due to heroic strike mechanics.
So basically roll on
Broken Promise
and leave the
Last Laugh
for us = ).
Last Naxx run my guild did we had a DK, a Paladin, and a Warr (me) as tanks. Well both actually dropped during the run, as well as a 2H tanking replacement for the DK. I didn't roll on the Last Laugh and the paladin OT picked it up. Well we downed KT and the Last Laugh dropped. The paladin rolled and beat me at the roll, I was going to have a fit since he already won the Broken Promise. The RL/GM and DK tank had to explain to the paladin to pass it to me because it benefits warriors more (and that he won an upgrade already).

That the fast speed of LL is very beneficial for Prot Warriors doesn't change the fact that LL is still BiS for Prot Paladins pre-Ulduar.

Just the same that was a good decision for that particular run. Pretty &*!@ty to roll on two tanking weapons in one night and furthermore to hurt you're entire raid by denying your MT a massive upgrade when it would have been a small change for him.
