They're more of a guideline than anything, you don't HAVE to stick to it completely.
The reason they use orange recipes is because it's a guaranteed skill up

I've never found those guides very useful. They almost always only suggest going with orange recipes, even if there are yellow ones that use less then half the mats of the orange one. A perfect example is in 300-375 leatherworking. From 310-320, it suggests Wild Draenish Gloves (9 x Knothide Leather, 3 x Rune Thread) x 10 . While I simply made Knothide Armor Kits from 310-320, which were yellow all the way yet I only missed two skill ups, letting me use 42 less Leather (which is huge) and saved several gold on the Rune Thread.

That and often times it suggests recipes where you would normally be too low to even have the mats for them anyway. Like when transitioning from, say, iron to mithril, you may end up using less mithril if you used that, but you really have 60 iron in the bank. Might as well skill up off the iron.

Also, most of these guides are for "grinding" a profession up once you hit 70, so the problem of being too low to obtain the mats is non existent. Most people see this as a better way of doing the crafting profs instead of leveling them at the same time you level your character. Generally, it is suggested pick up 2 gathering proffs to build up the money as you level, then depending on class and needs go with the crafting profession of your choice and grind it up using one of the "guides" The choice is ultimately your own though, go with what is easiest or more beneficial for you.
