I want to avoid using a /castsequence macro if possible. Basically I would like to have a macro cast Hand of Sacrifice on a target without losing my current target, then have Divine Shield pop and Divine sacrifice.
I am better off to simply make a macro for Hand of Sacrifice? /cast Hand of Sacrifice, and have a separate Macro with Divine shield and Divine Sacrifice?
Also how can i make a cast sequence macro work without having to click it more than once?

First I'll start by saying you can't have one macro do all of that because any non-talent spell activates the GCD (global cool down) preventing more than one spell being cast simultaneously, so just forget about it. But I can help you with some aspects of your problem.
Hand of Sacrifice macro:
This macro will cast HoS on your mouseover target, or your current friendly target if you don't have a mouseover. Simply place this macro on a bar, and push the associated button while your mouse is over your target.
Select the "?" icon from macro menu.

Divine Shield and Divine Sacrifice macro:
Since Divine Sacrifice is a talent it does not activate the GCD so it may be cast with another spell that does activate it like Divine Shield. This macro is fairly straight forward.
Select the "?" icon from the macro menu.

This information is just flat out wrong. What does and does not trigger the GCD is determined by the spell itself, not whether it's a talent or not. For example, most trinkets do not trigger the GCD, nor does placing hunter traps (as of next patch), or switching forms or auras. There are also several spells that can be used while the GCD is active that are not talented (almost all interrupts for example) as well as 'on next swing' abilities like heroic strike and rune strike that can be macro'd to things that trigger the GCD.
Inversely, there are also dozens of spells that ARE talents that do trigger the GCD. Haunt, Unstable Affliction, Mutilate, etc. etc. etc.
While it's true most spells do trigger the GCD, it has nothing to do with whether they're a talent or not.
