No doubt, the simplest professions to pick for making some startup cash are a combination of Skinning, with either Mining or Herbalism (Do not pick both Mining and Herbalism, as the "Track herbs" and "Track minerals" abilities are not able to be used at the same time, so you would be inefficient)
Down the line, you could make more money by dropping one of the gathering professions for an appropriate constructive profession.. but for starting up, it's best just to do 2 gathering professions. I personally wouldn't even bother with trying to sell the things you gather on the Auction House for a while, just sell to vendors for easy, quick, guaranteed cash.

Not ENCHANTING! Horrible way to hope to make some gold. As an enchanter, you usually have to listen to a bunch of whining that "enchanters" are "rip-off artists". The formulas alone can be very expensive, upwards of 100+g for Lifestealing, Crusader, etc. on some servers, let alone the material prices. Many enchanters offer "Enchanting xxxxx! Free with your mats" just to avoid the hastle of haggle.
My favorite whine on the Nazgrel server was a guy who believed that enchanters should only "farm" their mats and never buy them at the AH. Of course, he wanted his enchant "right now" and didn't have "time" to farm the mats himself.
My alts have done reasonable success with Skinner/Leatherworking & better even with Miner/Blacksmith. My Miner/Engineer hasn't been developed enough to get a good feel and I just started a Horde Undead Warlock with Tailoring.
*** Anyone have a good companion profession for Tailoring? ***
At high levels (360+) Primal Nether becomes a hot commodity for people want to have items crafted. On Nagrel server, standard PriNeth pricing is around 200 - 250 g.

I disagree with the people who say not to go enchanting. It makes you a lot of money through disenchanting.
Mid-level enchantment ingredients (especially those used for twink recipes) carry a premium. When you get to Outlands and start getting blue quest rewards, you can disenchant the ones you don't need/can't use to get Large Prismatic Shards which sell for anything from 15g to 30g depending on your server. And in instances you can disenchant the drops from bosses.
You'll also be able to disenchant all the green drops you find on your travels which you can disenchant and sell or use to fund your own enchantments on your own gear.
You only need about 225 enchanting to enchant everything in the game, I think. Plus if you are a caster, you can still take up tailoring for your class set.
