It really depends on what you want to achieve and how you are going to multibox.
My own goal with multiboxing is to try to do "hard things" with two characters (mainly instances). I use voice control to control a single character so I don't have issues with key cloning.
I first leveled a druid healer with a warrior tank. The advantages of the druid is that he can heal while moving. I did full instance clears of Hellfire Ramparts, Blood Furnace, Slave Pens and Under Bog. I have also been able to kill the first boss in Shadow Labyrinth.
However, the DPS of a tanking warrior is not the highest so some encounters are very slow. This might change with 3.0, but after my druid got to 70 I respecced him as tank and tried to pull my shaman through the same instances. And I must say that it has been much easier as the a tanking druid has a quite high DPS. Paladin tank DPS is also quite reasonable I believe.
So for me a good combo is a druid or perhaps a paladin tank and a healer on follow, perhaps a druid or a priest.
