Which class should I roll?
Had a DK back in the summer but deleted him once I figured out I didn't like being a class that no one wanted. Did 2500 DPS in heroic blues and purples on him, but still got tired of him. Plus all the competition for gear with pallies, warriors, and other DKs wasn't fun.
Rolled a priest and a lock, decided that casting wasn't fun. I don't find healing fun either. Also having an abundance of competition for cloth DPS gear wasn't a fun idea either.
Thought about a druid, and like the idea of being a rogue, mage, priest, and tank warrior all in one class but don't like having to be in animal forms.
Had a level 80 warrior, grew to hate tanking on him.
I've tried leveling shamans and pallies but get bored of them in their mid 20s at the most.
Leaning towards rogues or hunters but worried about not getting invited to raids since all they can do is DPS.
So which class should I roll?

Well, you found a reason not to play each class. Not having a slot in a group because you're dps isn't really a reason not to roll a dps class. 3 out of 5 people in a 5 man are dps (5-6 dps in 10 mans, and 15-19 dps in 25 mans). If you really want to play a rogue or hunter then roll one of those.
Otherwise stick it out on the paladin and shaman until they get their class/spec defining abilities and decide if you don't like them or not. Since you don't like healing you'll be dps'ing on the shaman and paladin. The plus side on the paladin is that if you like their tanking style you have an option for that.
If you have friends that play see what classes their guilds need. If they need a class you're interested you might want to go with that.

Roll them all
On a serious note, roll a paladin if you want to do all three. Or a shaman, as they can melee dps, cast dps, and heal (I know you don't like healing but still.)
Paladins are really, really, really slow to level (as ret anyways) until you get divine storm, then its not that bad. Just get the BoA chestpiece and shoulders and get to it.

One thing that worries me is not being able to find groups due to people thinking that you need a high gearscore to do heroics.
And the new vote-kick system coming out is also worrisome, since it gives you a 15-minute debuff to where you can't run instances for 15 minutes and I might be put into groups that abuse vote kick.
L4D shows how badly vote-kick systems can be abused.

This, combined with your original post, leads me to believe you are, or have been in the past, a loot ninja.
You don't want to roll certain classes because you don't want to share drops, and you have an unhealthy concern about getting kicked out of groups.
WoW just might not be the game for you. Try Dragons Age: Origins. All the loot is yours.
Actually I haven't ninja'd a single piece of loot in my entire WoW career.
My concern is actually those who might kick for not having a super-high gear score, although I guess you're right about me having an unhealthy concern about this, since the majority of the WoW community will probably be reasonable.
Yeah, guess I should be less concerned about sharing loot thing and just roll a class that I like. Maybe roll a tank/heal pally?

From what I understand you don't like casters and don't want to have loads of competition with the gear roll. Personally love pally, as long as I don't have to play them(except holy, that rock's), since they can tank,dps and/or heal.
Since you've played loads of different classes you should know what type of player you are. Melee: rogue should be nice since its only you and feral cat dps that will roll on the same gear. The other choices are enhance shammy(off spec heal or range dps) or hunter.
I think you should choose between a rogue or hunter depending on if you want to be melee or range. Both are pure dps classes. Hunters are known to be an "easy" class to play.
