So what are they?
As an Afflic Warlock, it takes good timing to be able to refresh a dot right when it ends, so you don't "clip" them causing loss of dps, and I have to know when 15% hits so i can start my soul draining.
On my Unholy DK, i have to know when to throw in a
Ghoul Frenzy
in place of a Scourge Strike, and an extra Icy touch to keep it balanced, while dumping Death Coils during rune regeneration.
On my Druid I spam Wrath and Moonfire.
So does anyone know which classes/specs have the more complex rotations, and which have the less complex?

old affliction locks before it was 3.09 or 3.1 i dont remember which, something along the lines of shadow bolt- haunt- ua- immolate- coa- corr- siphon life- shadow bolt spam and refresh dots as needed, i remember when i first went to affliction before i got the rotation down i normally couldnt even shadow bolt for filler.

The Affliction Lock rotation is really easy. Its really two rotations. A shorter leveling rotation and an expanded raid rotation. Both are still simple. Its just a matter of walking down the keys and paying attention to your DoTs.

Elemental Shamans have it really easy, you can just macro your entire rotation into one button..
Wish that was true!
Elemental rotation takes a lot of devotion,do you think it's easy to keep pressing the same 3 buttons for 2 hours?

You know, there's no boss fight that takes 2 hours, and I imagine you'll throw some chain lightning in on trash pulls. So yeah. 4 buttons. :P

My druid is only 77, but already the cat DPS rotation seems pretty complex to me:
Debuffs/dots to keep up:
Mangle
Rake
Rip
Tiger's Fury / Berserk
Faerie Fire
Savage Roar
Cower ( hopefully you don't need this)
Bark skin (if solo'ing)
And that's in between your shreds and mangles as fillers. All of the debuffs / buffs last different amounts of time, and especially if you're on berserk, you'll be creating combo points faster than rip / savage roar runs out.
Getting the rotation perfect, even while solo'ing when I don't get the full effect of rip, makes a big difference ( Pounce -> mangle -> FF -> Shred -> Rake (if needed) -> Rip -> Mangle -> Savage roar).
Tanking's been a bit easier, though, with just maul / lacerate / mangle / swipe / barkskin / berserk / faerie fire to keep up, and maybe a debuff roar once in a while.

No rotation is that very hard, just you have key bindings in the right order, for an example at my unholy DK my rotation is Plague strike - Icy touch - Blood strike - Blood strike - Scourge Strike - Death Coil - Death Coil - Death coil - Scourge strike - Scourge strike - Scourge strike.
Then for this I just press G - H - J - J - K - L - L - L - K - K - K. The only hard part about this is to remember how many times I use each button.

In raids your most likely going to have a tank or a arms warrior to refresh Mangle/the warrior ability thats simelar
and i gotta say i aggre Feral cats got the hardest rotation i have yet to try

Though the hunters don't have a rotation and rather have a shot priority as well as a no overlapping rule, I wouldn't say it's too hard.
