Well, i find skinning better for making gold with, since i can spend 3 hours killing beasts in the Northrend basin zone....can't remember the name of it and i can get like tons of stacks of borean leather and can sell those for like between 5-25g per stack.
It depends on the demand at the time.

Skinning...
Generally, you will be selling at lower prices. However, you'll have MUCH more supply, because you can skin at a much faster rate than you can gather for mining or herbalism.
Also, you can skin some mobs from a los of heroics to get mats(Grim Batol is a goldmine, or i'd say "Leathermine")

Isn't 75 the cutoff for beginning skinning? I believe that is the point where you need to return to a trainer to be able to advance your skill beyond that point. Once you do that, you will have to go back and kill and skin beasts that are within your range to get "caught up" to your level.
