Doable, but difficult. Not worth overgearing the rest of the party just to get the Ret pally through as tank. It's sub-optimal, and you as healer would need to pick up most of the slack. I don't see anything wrong with what you did, not worth wasting your time risking a few wipes.
Having said that, all he's missing is about 10% mitigation from talents, 10% armor, some stamina, and Holy Shield. He can use HoR/Exo to pull instead of Avenger's Shield without undue problems. Mana problems shouldn't be an issue if he has Judgements of the Wise. He can make up the stam and armor from being overgeared - rares and epics instead of quest greens.
Still don't like the idea of it.

Despite what others said, I tanked ST 2-3 times around that level. Not too many arguments and as long as no one is just goofing off and not paying attention, we went well. I stayed at the top of the dps charts, and never really had a problem with threat. Yet, its still a personal preference if you want ot go with one or not.

ret will take more damage, but at the same time, do much higher TPS in the same gear.
If a ret paladin has prot gear, tanking ST is a breeze, in fact, if a ret has appropriate level tanking gear, he can tank a heroic without a problem.

Story time with Rebel.
Once upon a time I four-manned every instance from SFK up to lvl 80 heroics.
Up to 60 here was our group:
Ret Pally (tank)
Shadow Priest (healer)
Ele Shaman (dps)
Rogue (dps)
No real tank + no real healer.
We got through everything up to Outlands perfectly fine. At outlands I went to prot and the priest dual-spec'd to disc and we four-manned all the way up to lvl 80.

And if the ret pally had the heirloom gear, he could have tanked it Piece o' Cake. I've done it before, with the chest shoulders and the bloodied arcanite ripper. Its not really hard, as long as the healer doesn't go oom after one mob and healing you three times.
It happened to me, i had to heal and tank throguh most of the instance. It was bloody hard!

On a related note: I tanked all the normal wrath instances as ret wearing prot gear up to UP, which I had trouble with at level 78. I probably could've pulled it off if I was 80. I'm talking about just after release when I was leveling my first character past 70.

One thing everyone missed is Crowd Control. Anyone can tank up to Outland then you want to have at least a tank class(dps spec is fine).
When you use CC you can just burst down mobs 1 by 1 and its cake. A ret can repent pull then stun one and if you have rogues, mages, hunters, etc its even easier.
As a frost mage leveling I pretty much pulled for all my groups, using my snares and frost novas to CC mobs, while having full aggro the whole time...Most people didnt mind it after they got used to the kiting/focus fire method. I will admit tho it was at about ST that I wasnt able to kite/tank certain bosses lol.
Anything is possible with good players.Good point. I believe I was heavily conducting CC when I was going though the wrath dungeons the first time. Back when people didn't have the 'steamroll everything' mentality yet.
'Anything is possible' might be a misnomer. Maybe 'amazing things are possible'. :P
No matter how good your group is, you can't tank heroic Gormok the Impaler with a mage.
You can, however, kill yogg-saron in ulduar 10-man
in blues.
