I don't know about the rest of you, but I have a 16 slot bag FULL of quest items and to be honest, there are some in there that I don't need anymore or don't know if I need them. Either I abandoned the quest or completed the quest and the item has additional charges that I really don't need. What do you do with these items? put them in a bank slot or toss most of them? Is there a place to check if I really need to walk around with an item "ie: stained journal, faded photo" and so on.

Generally - and this isn't 100% true - when you turn in a quest the quest item will disappear from your packs.
If it is what I call a quest consumable - like a water breathing potion with multiple charges for quests where you're swimming underwater a lot - then it usually doesn't disappear when turning in the quest. You can keep those, but they aren't necessary and you can trash them - they just sometimes come in helpful sometime down the road if you can't get that effect easily yourself.
If you abandon the quest and the item isn't a quest consumable, then it will usually be destroyed in the process. There are exceptions to this.
Lastly, if you turn in a quest and find you still have the item afteward, and it's not a consumable, it could either be a glitch, or you might still need that item for later in the quest chain. One good example (and a quest I can't complete) is the black dragonflight molt you receive from Kalaran Windblade in Searing Gorge; although the quest line seems to end when you receive this, you eventually can run across a Dragonkin in a cave in Burning Steppes who will continue the quest chain.
Unfortunately to my knowledge WoW hasn't implemented any sort of completed quest log and so there isn't an easy way to track what you need and what you don't. I'd love if you could though!
