I started with Blacksmithing and Mining. After I lost a use for Mining, I dropped it and picked up Enchanting. Blacksmithing/Mining then dropping Mining for another tradeskill seems like a good way to go-- assuming you can afford stuff like that.

Are you literally level 70? If you are, I'd say go with Mining / Alc or Herb / Alc.
If you aren't, I would definitely say go Herb / Alc.

I have enchanting/mining on my rogue. A good combo for me. My mage is a Tailor/JC, so the ore I mine is sent to her. It's prospected then cut into high demand gems and sold. My hunter has Engi/LW. These two profs are expensive to level, especially the Engi. From 1-375 engi will run about 3500 gold depending on the cost of mats. LW will run about 2k gold. And finally, my tauren shaman has alchy/herb. Oh, I've got a druid with skinning and herbalism.
So what's good for a rogue? I'd stick with enchanting and maybe go LW. That's what I originally was on my rogue but changed it later so I could drop mining on my hunter and pick DS LW for the BoP ebon pieces.

I'd recommend going Skinning + Leatherworking up until you max out Leatherworking and make yourself the Primalstrike set. Once you do that I'd drop Skinning and pickup Enchanting as a money-maker. I enjoy running through lower level dungeons and feeling god-like. Making money off it just makes it twice as sweet.
