My lvl 54 hunter got Skinning / Leatherworking. I dont find that useful right now, because i dont need any of the items made by Leatherworking. I suggest you to do as Lycana says. i mabye even change myself :P

I'll say LW hands down but if you have the money definately Goblin Engineering. LW is cheap efficient and useful for the armor kits and various items you can make (quivers)

I personally took up gnomish engineering just for fun. The net gun and some of the other trinkets are fun but occasionally backfire. I can't make or use the rocket lancher but I am still happy with the choice just because its fun. I can still use the XL jumper clabels, just need a goblin engineer to make them, and being gnomish you can still make all the scopes and ammo as well as the epic goggles. I also have stun grenades and frost grenades for cc even if they don't have the duration of some of the gobline ones. The rocket laucher looks fun but I have never really had the time for a 5 second cast in bg unless I get lucky. I think either line of engineering is a great way to go. With the sockets on the epic goggles and Glyph of Ferocity from CE rep it makes an awesome epic but I still have yet to see an arcane vortex.

Currently my hunter, Now level 70, is using LW (lvl 352 so far) and Skinning. I did not train LW until level 65 when I knew I'd be getting close to the point where it would be actually useful to me.
While leveling, I used Skinning and Herbalism, the mats from Skinning I put aside on an alt (or two lol) and the Herbs I sold in the AH for some extra income. This served me very well, as this being my first level 70 and in 3 months, I have my epic flying mount and around 5k gold to play with.
I would recommend, IF you choose to go LW, you consider this route, as others have stated, LW before level 65 or so, pretty much is useless. BTW, saving all the mats gathered allowed me to Drop Herbalism and get my LW to 350 in 1 hour.
And yeah, I am finding that leveling from 350-375 is a bit of a pain, I'm hoping the new recipes in the upcoming patch with help out a bit, I especially like the leatherworking bags (thank God!)

Leatherworking, Leatherworking, and Leatherworking. it's absolutely amazing for gear. allthough Lycan's opinion on Golbin Engineering is good, you will find far better ranged wepons in dungeons, and the gear from LW is going to be a better boost then the helm from eng.
I am currently playing a lvl 70 hunter myself, and am at 362. some of the benifits of Leatherworking, you can craft yourself Felstalker Armor (

) and is a very nice set that will easily hold you over until you max out your leatherworking, and going Dragonscale Leatherworking, at 375 you will be able to craft the three piece epic Netherscale Armor (

) which is an aboslutely amazing set that will hold you over well into a raiding career.
Also, as a leatherworker you have the availabilty to a multitude of BoE patterns that have the potential to make you quite a bit of profit in the long run.
Leveling leatherworking myself, I can tell you its not an easy grind, but it will be worth it in the end.

). Unless you start getting into T6, nothing you find is even going to be close to these goggles. If you've leveled mining, the mats are all farmable and fairly cheap, and you just need one nether.
On the other hand, the LW set is going to take -3- nethers and a royal buttload of primals. And it's all fairly easily replaced. For a chestpiece, the Thick Netherscale Breastplate(

) is fairly easily farmed up, and the only difficulty is finding an LW with the nether. For wrists, the Felstalker Bracers(

) are both very good and very cheap. I've seen them on the AH for as low as 25g, because so many LW are making them to skillup that the market is glutted. The belt can be replaced by the Telaari Hunting Girdle(

) out of SH.
The Ebon Netherscale set just doesn't outclass it's competition enough to justify it over the goggles.
